I remember the first time I tasted fårikål. I had read for a long time about this of lamb and cabbage that is Norway’s . It seemed too simple, I thought—just lamb and cabbage, with water, salt, and pep- per, the building blocks of most . But armed with bone-in lamb, cabbage, and a handful of recipes, I began the traditional pro- cess of arranging the ingredients in the pot, letting it all simmer, and trusting that some sort of culinary magic would take place. The results far exceeded my expectations. I couldn’t anticipate the way the modest list of ingredients would somehow yield per- fectly restrained results. The flavors of the cabbage and lamb shone individually and yet felt informed by one another. The whole pep- percorns added an herbal, subtle floral note that accented the flavor of the lamb. Fårikål has been Norway’s national dish since 1972, and Fårikålens Festdag, Fårikål Feast Day, takes place on the fourth Thursday of September—September 28 this year. Fårikål’s ingredients reflect that are integral to the Nordic region. There’s a moment when summer and fall intersect, the slowly fading warmth of the sun mingling with the crisp breeze that whispers through the trees. At this exact point, you will find a small window of time in which figs ripen on the trees and chante- relles appear at the market. This salad origi- nated one day in mid-September some years ago when I found a generous handful of figs from our friends’ garden in our kitchen along with some chanterelles. I had another salad in mind at the time, one from Danish Trine Hahnemann in her book The Scandi- navian Cookbook that combined chanterelles with plums and bacon. But the figs were call- ing out, signaling the perfect representation of this moment between seasons, one of my favorite times of the year. Eating locally and according to the sea- sons is something that crosses cultures and generations. Chanterelle, Fig, and Blue Cheese Salad

This salad is forgiving, so if you don’t have all the ingredients for the dressing, feel free to im- provise. I’ve also made this using sherry vinegar and olive oil in place of the white balsamic vinegar and walnut oil, and that also turns out lovely.

5 oz. chanterelles 1⁄8 tsp. salt, plus more to taste 1 tbsp. butter or extra virgin olive oil 3 oz. baby arugula (or a mix of baby 4 figs, halved lengthwise arugula and baby spinach) 1 tbsp. white balsamic vinegar 1 ½ oz. Danish blue cheese, crumbled 1 tbsp. walnut oil

Gently wipe dirt off the caps and under the gills of the chanterelles using a damp paper towel. Heat olive oil in a large skillet over medium-high heat. Add chanterelles and sauté, stir- ring occasionally, until they are tender but still retain their shape. Start removing the smaller mushrooms after about 3 minutes, allowing 5 to 7 minutes for the ones with thicker stems. Remove the skillet from the heat and return all chanterelles to the pan. Season with a pinch of salt and stir, allowing the residual heat to help the liquid dissolve the salt into a that adheres to the mushrooms. Set aside while you prepare the rest of the ingredients. Make the dressing in a small bowl by stirring the vinegar, walnut oil, and salt vigorously with a fork until emulsified. Toss the arugula and spinach with the dressing in a serving bowl until the vinaigrette evenly coats the leaves with a glistening sheen. Add the reserved chanterelles and figs and stir gently, then add blue cheese. Serve immediately. Kleiner, 92, who for almost 50 years worked with Norwe- gian colleagues on the impact of migration and social mobility on mental health, died August 12 of heart failure in Abington, Penn. In American English this time of year is called fall. In British Eng- lish it is called autumn. In Norwegian it is called høst. This season was originally just called harvest, be- cause it was the time to bring in the crops. The word harvest actually comes from an old Norwegian word, haust, which means to gather or pick. The word in modern Nor- wegian (bokmål) is actually høst, which means to harvest. Aren’t words funny? When people started to move to the cities in the 1600s, harvesting wasn’t as important as watching the fall of the leaf, as the season was later called. Can you imagine telling someone that you are starting school in the fall of the leaf? That name quickly was shortened to fall. Autumn is also a very old word for this season, but no one really knows where it came from. There are many words that sound like it, like the Old French word autumpne. No matter what it is called, it is the time to pick apples, enjoy the colors on the trees, and look for your winter hats and mittens if you live in the north. Høst is also the time to harvest many kinds of root vegetables, or veg- etables that grow in the ground. Can you guess what these vegetables are called in English?
