Add eggs one at a time, beating after each addition until mix is smooth. Drop from tablespoon two inches apart onto a greased baking sheet. Bake in 450° oven for 15 minutes, then reduce heat to 325° for 25 minutes. Remove with spatula and cool on rack. When cool, cut side of each puff and fill with heavy whipped cream.

Sørenes, Gro Steinsland, a retired professor from the University of Oslo, has researched the history and mythology of Dovre for sev- eral years and has written a book on the sub- ject. It was natural for the founding fathers to swear cooperation with Dovre, because Dovre was the meeting place and symbol of cooperation in Viking times and even deeper into saga times. Apparently, a single ruler, Haakon Jarl, born in 935, was called “Dovrekongen” (King of Dovre) in a poem from Viking times. He was a renowned fighter. The poem was the first source showing Dovre as a sym- bol of the country. There’s a lot more to this story, and I invite you to search for it. Dovre was the oldest symbol of Norway with which the forefathers were acquainted, and they wanted to build the new constitu- tion on history—and on something solid enough to last the test of time.

If you’re a wildlife enthusiast, you’ll love exploring the unique Dovrefjell re- gion, whether you’re on foot, on skis, or paddling along in a canoe! To get the most out of your adven- ture in the Dovrefjell National Park, be sure to take part in the safari. For 20 years, the park has been guiding ad- venturers through the mountains to expe- rience the muskox in its natural habitat. The safari runs daily during the sum- mer months and lasts for five to seven hours. Each tour starts at the Railway Station at 10:00 a.m. Hikers are encouraged to bring a camera to capture photographs of these unique creatures, which can grow up to 900 pounds. But muskoxen aren’t the only animals in the area; you’ll also get to see some reindeer and mountain grouse if you’re lucky.
