7 Castillo de Eneriz rosado 2018, Navarra. Spain

Navarra has been known for a long time for producing delicate while cheerful rose wines, mostly made from grapes, or its original name, Garnacha.

In fact it is common in Northern Spain to go to a bar and just ask a Navarran wine, and automatically get served a glass of rose.

Perhaps the main characteristic of Navarran roses is its deep, almost red, dark pink colour.

This wine is not different and you will find a delicate aroma of white and blue flowers.

Castillo de Eneriz has been making great wines for a long time, and although their strength are red wines, you will not be disappointed by this rose.

The palate is fresh, and aromatic, perhaps a bit thin, but easy to drink.

Have it on its own or with salads, white fish or chicken.

8POIN8 TS 8 Ch. Cavalier Marafince 2018, Provence. France

Château Cavalier is an estate dedicated exclusively to the production of in the heart of Provence on 132 hectares of contiguous vineyards in the foothills of the Massif des Maures in Vidauban, in the Var.

The name of the Château comes from the stream that flows through the property, Cavalier, which contributes natural irrigation to the vines, which ripen slowly during the cool summer nights. All the wines are fermented using native yeasts, adding to the expression of the terroir.

The property is certified Terra for sustainability, and all facets of the business are designed to respect the people, environment and the vineyards.

The Cuvée Marafiance is a blend of Grenache, , Rolle, Cinsault, Sémillon and , designed to be a rosé to enjoy with many different types of foods. The wine is the palest of pink, with highlights of sky blue.

The nose is refined and expressive with notes of citrus, red fruits along with subtle floral and spice notes.

On the palate, the Cuvée Marafiance showcases excellent structure and finesse, carrying those wonderful fruit flavors over a delicate acidity into a mineral-laden finish.

Refreshing, vibrant and delicious, enjoy this beautiful Provence rosé with a tomato salad, grilled vegetables or fish stew.

Lots of flowers, very aromatic wine, the ideal aperitif 9POIN0 TS 9 Ch. Gassiwer Pas du Moine 2017. Provence. France Originating from Barcelonnette (Hautes-Provence) and part of the Provencal nobility since 1421, the Gassier family bought Château Gassier and its 40 hectares of vines in 1982.

In 2004, the Gassier and Jeanjean families decided to join forces and run the estate together.

Today the vineyard is managed by Baron Georges Gassier, who represents the fifth winegrowing generation of the family, working with the support from his father.

They specialise in rosé and certainly do a great job. Pale pink colour. Beguiling and elegant fruit, dry, super-smooth and balanced body. Very moreish.

This wine has an intense nose with lots of white flowers and citrus

On the palate is fresh and meaty and rather unusual. Pair it with blue fish.

8POIN9 TS 10 Chateau de Pampelone 2018. Provence. France

The estate has been in the Gasquet-Pascaud family since 1840, when it was purchased by Gasquet ancestor André Folco, treasurer for Napoléon III.

The current proprietor of this beautiful 400 acre domaine is Edgar Pascaud, and his daughter Marie directs Pampelonne’s winemaking.

The magnificent 17th century Château de Pampelonne borders the famous French Riviera beach of the same name in the commune of Ramatuelle, near Saint Tropez.

Château de Pampelonne produces an excellent red wine and a modest amount of white wine, but it is the Côtes de Provence Rosé for which the estate is best known. In addition to the classic rosé cépages of Grenache, Cinsault and Syrah, Pampelonne also uses Tibouren in the blend. This ancient Greek variety, now unique to this area of France, is valued for the aromatic intensity it lends to some of Provence’s finest rosés.

A blend of 6 grapes it brings a soft and aromatic nose with lots of peach aromas.

On the palate you will notice rather high acidity, medium length with grapefruit, pineapple and roses.

Pairs well with Fish Tartar, Red Mullet Fillet and Grilled Sea Bass

8POIN9 TS 11 Gerard Bertrand Gris Blanc 2015 - France

This wine is produced by Gerard Bertand winery, an icon in Southern France wines, who has been making good wines in different areas, experimenting with new grape combination, as well as making wines in the traditional ways.

The vines are ideally located in Tautavel area, between Mediterranean sea and Pyrenees mountains, 30 km north to Perpignan in the South of France area.

The dry and sunny terroir enables Grenache, the emblematic grape variety of the Mediterranean, to express its best aromas.

An original rosé with a very pale pink colour, common in this area for rose wines. The bouquet reveals delightful red berry scents.

Grenache is the king of grape varieties when it comes to making light, racy, fruity rosés in contemporary style.

Grenache reveals all its suppleness and cherry aromas. Its fig and sometimes cocoa flavours, plus its rounded sensations on the palate, make it one of the great varieties of the South of France.

A slight sparkle on the palate gives the wine all its freshness and brings out its fruit to the full. The elegant finish is pleasantly fresh and mineral.

Very refreshing and easy to drink, makes this wine ideal as an aperitif, but also a good pair with light food like salads, white fish, steams seafood and pasta.

9POIN0 TS 12 Dom, OTT Clos Mireille 2018. Provence. France

Christian and Jean-François run three estates: Château de Selle, Clos Mireille and Château Romassan.

Each of these properties has its own individual charm and personality. Each can be proud of their extremely elegant rosé, red and white wines. In their cellars reigns one sovereign wine: the famous “Cœur de Grain”.

The Clos Mireille Rosé is an expression of a blend of various grapes typical of the Côtes de Provence appellation: Grenache, the majority grape, chosen for its full-bodied texture, Cinsault for its well-known softness and Syrah for its fruity roundness.

The wine is a very pale pink highlighted, depending on the , with golden, orange and even vermilion tints. Its bouquet reveals fresh fruit (mango, melon) punctuated with lemony notes.

On the palate, its freshness develops through citrus aromas around a resolutely mineral core before ending with a subtly persistent finish. Although you may find the nose a bit thin, it is pure elegance. White currant and lime on the nose.

On the palate this wine is very nice, complex and offers a great length. A top rose. Pair it with salads, ceviche and clams.

9POIN2 TS 13 The palm caves d esclans 2018, Provence. France Chateau d’Esclans is located on an exceptional site, on elevated land near the Gorges de Pennafort, twenty five kilometers northwest of the ancient Roman city of Frejus on the Mediterranean coast.

The first traces of the chateau’s site date back to the times of the Gauls during which its location served as a lookout point to spot intruders coming by boat into the Gulf of Frejus.

The chateau’s cellar structure or foundation (known today as the oldest in the region) housed an original Chateau that was given by the Comte de Provence to Gérard De Villeneuve, in 1201.

The current chateau, inspired by Tuscan Villa design, was built during the mid 19th century.

The Palm is a blend of Grenache, Cinsault and Syrah.

Pale pink with green hues both of which are clear & very expressive. Great aromatic freshness on the nose followed by more subtle, fruity notes on the palate.

The freshness is coupled with exceptional length and roundness. Crisp and suave finish.

As you would expect having Angelina Jolie and Brad Pitt as owners of Miraval, the brand is rather famous, but I can say the fame is well deserved as the wine is excellent.

Miraval Rose has an attractive, soft blush colour and is beautifully bright .

On the nose, there are delicate notes of red berries, peaches and white flowers.

The expression of the soil is revealed on the palate by its impressive freshness bringing minerality and salinity, typical from the area, but found in great harmony and balance on this wine . Enjoy it on its own, salads and pasta dishes.

Coteaux Varois is a one of the latest appellations located on a cooler, higher territory within Cotes de Provence, named after the Var department. It harbours some formidable new comers at estates like Domaine du Deffends and Chteau Routas.

Coteaux d'Aix-en Provence is the other important appellation and isn't quite so rose dependent, making the full range of all 3 colours. Chateau de Vignelaure is among the best known estates, making wines likely to compete with Bordeaux. In the western end of this appellation you can find the very specific Les Baux-de Provence, vineyards around the haunting stones which gave their name to bauxite.

Provence also offers a number of more particular smaller appellations, of which the most crucial is Bandol, known primarily for the characterful, warmly spicy oaked reds made mainly from Mourvdre and dry roses made primarily from and Grenache. We are a group of wine and food lovers, wine and hospitality trainers, and wine and food writ - ers, who decided to get together and create Wine and Restaurants for three reasons:

1.- Our passion for food and wine, and willingness to share.

2.- Too tired of the restrictions of current life style magazines in Vietnam, whose sole target is money, many of which (if not all) do not do restaurant reviews unless restaurants and hotels advertise, or promise advertising (forget about the claims of independence and mystery visits, our writers used to write for them, we do know!).

3.- Growing interest in Wine in Vietnam, but not dedicated media.
