Fatty Acid Composition of Oil from Adapted Elite Corn Breeding Materials Abstract The fatty acid composition of corn oil can be altered to meet consumer demands for “healthful” fats (i.e., lower saturates and higher monounsaturates). To this end, a survey of 418 corn hybrids and 98 corn inbreds grown in Iowa was done to determine the fatty acid composition of readily-available, adapted, elite corn breeding materials. These materials are those used in commercial hybrid production. Eighty-seven hybrids grown in France (18 of which also were grown in lowa) were analyzed to determine environmental influence on fatty acid content. -

Ciresi B.S. The Ohio State University June 2008 Committee Chair: Grace Falciglia, Ph.D. Abstract Background. Crohn’s disease (CD) and ulcerative colitis (UC), collectively known as inflammatory bowel disease (IBD), are chronic illnesses that affect predominately the gastrointestinal tract. The pathogenesis and etiology remain unclear but the importance of environmental factors, in particular diet, is evidenced by the increased incidence rates of the recent decades that genetic inheritance cannot account for. In particular, the quantity of fatty acid consumption has been consistently linked with IBD risk. While several studies have investigated the connections between diet, etiology, signs and symptoms associated with IBD, very few have explored the relationship between disease state and specific fatty acid intake in the pediatric IBD population. Methods. In this cross-sectional study, 100 pediatric patients from Cincinnati Children’s Hospital and the Hospital for Sick Children in Toronto with diagnosed IBD (73 with Crohn’s disease (CD) and 27 with ulcerative colitis (UC)) were included. Three-day diet records were collected from the patients for the assessment of their dietary intake. The abbreviated Pediatric Crohn’s Disease Activity Index (PCDAI), the abbreviated Ulcerative Colitis Activity Index (PUCAI), and markers of inflammation (lipopolysaccharide binding protein (LBP) and S100A12) were used to assess disease severity. -

Consequently, issues related to the origin of the Korean or Chinese substrate used in shiitake mushrooms produced using bag cultivation have been reported. Here, we investigated differences in fatty acids (FAs) and stable isotope ratios (SIRs) in shiitake mushrooms cultivated using Korean and Chinese substrates under similar conditions (strain, temperature, humidity, etc.) and depending on the harvesting cycle. The total FA level decreased significantly by 5.49 mg g 1 as the harvesting cycle increased (p < 0.0001); however, no differences · − were found in FAs between shiitake mushrooms cultivated using Korean and Chinese substrates. -

Derived Variables - Nutrients Responses to the 116 items on the DQES are converted to nutrients by programs developed at the CCV. Two standard portion factors used in the calculation of nutrient are included in the data sets. Variable Description PSF Portion Standard Factor APSF a Alcohol Portion Standard Factor Sources of nutrient data Values for most nutrients are based on the Australian food composition data base, NUTTAB95.1 Nutrient values form other sources are listed below. None of these new values have been tested or validated so the CCV recommend that the values be used with caution; the CCV welcome any feedback. o Folate (Folate) and vitamin E (VitE) are derived from British food composition tables.2 o Alpha-Carotene (AlphCarot), Beta-Carotene (Bet_Carot), Beta-Cryptoxanthin (BetaCrypt), Lutein plus Zeaxanthin (LutnZeax) and Lycopene (Lycopene) are derived from the USDA data base3 and are measured in micrograms/day. o Glycemic index (GlycIndex ) and glycemic load (GlycLoad) are derived from an international table.4 Note that the variable Bet_Carot measures total ß-carotene intake, and should not be confused with the variable BetaCarot which estimates ß-carotene equivalents (mcg/day) from NUTTAB and is calculated as the sum of the ß-carotene and half the amounts of - carotene and - and ß-cryptoxanthins present. Although values for the 2 variables are likely to be highly correlated, values may differ to a large extent, having been estimated from different databases, developed at different times in different countries. Also different foods would have been averaged to match values with the DQES items. Hodge at al have described the derivation of values for Glycemic index (GI) and glycemic load (GL) as follows:5 ‘Glycemic index is a method of ranking foods on the basis of the blood glucose response to a given amount of carbohydrate from that food. -

ABSTRACT Butter is produced from cream or yoghurt in dairy factories and farms and called as butter or yayik butter in Turkey. Karinyagi is also made from cream and yoghurt as yayik butter, but the packaging material is different from others. Karinyagi is produced by filling of butter into purified goat’s and sheep’s stomach (the traditional name is Karin) and storage in this material during self-life. The aim of this study was to determine the fatty acid composition of Karinyagi made from cream. Twenty Karinyagi samples were randomly collected from different regions of Burdur, Turkey. The fatty acid composition of samples (by gas chromatography) and chemical properties were investigated. It was deter- mined that the chemical properties of Karinyagi were similar to butter produced with cream and yoghurt. The total saturated fatty acid level of Karinyagi samples changed from 62.31% to 76.64% (mean value 67.14 ± 3.36%), while unsaturated fatty acids of them ranged from 20.48% to 31.57% (mean value 28.46 ± 2.67%). Minimum and maximum levels of monounsaturated fatty acids of Karinyagi were determined as 18.98% and 28.57%. -

The most common way to improve the composition of foodstuffs by n-3 polyunsaturated fatty acids (PUFA) is supplementing animal diets with different plant oils, seeds, fish oil, and freshwater and marine algae. Moreover, fish oil and marine algae (e.g., Schizochytrium limacinum) supplements are a good source of long-chain PUFA (LC-PUFA), such as docosahexaenoic acid (DHA). DHA is essential for the development and normal function of the brain, and DHA has beneficial effects for human health, such as reducing the risk of coronary heart disease. In addition, DHA fatty acid has an anti-inflammatory effect, which may help to improve the health of mammary gland secretory activity against the mastitis pathogens. Mastitis pathogen bacterial infection causes an inflammatory reaction within the udder and it leads to reduced milk secretory activity and produces a disadvantageous quality of milk. -

Also, it has been used as an herbal medicine and a functional food simultaneously for a very long time. In this study, 15 cultivars of jujube that were collected from a same farm in Shanxi Province, China, were analyzed in terms of their non-volatile components, including reducing sugars, organic acids, fatty acids, amino acids, minerals and antioxidants, and volatile compounds, in an effort to investigate their nutritional values, and the similarity between the cultivars so as to classify the cultivars based on their chemical composition.
