Web: http://www.rirdc.gov.au Published in October 2008 by Union Offset ii Foreword The main objective of the project was to recycle solid waste produced from the 2- and 3-phase olive oil mill extraction processes. A composting technique was developed for this purpose that can be applied as an olive mill waste management tool. The technique is characterised by process efficiency and low cost. The process was used for composting olive husk waste collected from 2005, 2006 and 2007 harvests. The study was done over three years at three sites in New South Wales. The olive industry will benefit from the results of this project by being able to convert liabilities (wastes) to assets (value-added compost). The consequence is management of environmental pollution, and sustainable and responsible farming practices. The amendment of olive grove soil with the olive husk compost will assist in healthy growth of the trees by improving the physical, nutritional and microbial status of the soil. The key findings of the project are the ability to covert the raw, phytotoxic olive husk waste to non- phytotoxic compost high in organic matter. There was a gradual decrease in the level of phenols in the olive husk during the composting process resulting in a product which is amenable to the growth of plants. A new procedure for extracting phenol was developed successfully in this project for the purpose of assaying phenols in the compost. Using this method, levels of phenol in the compost dropped from 29.68 mg/g at the early stages of the process to 8.9 mg/g at the completion. Although the majority of Australian olive growers use the 2-phase oil extraction process, the composting procedure developed in this project was found to be applicable to both the 2- and 3-phase olive husk wastes. This research, thus, was aimed to study the influence of three different harvesting times on the quality parameters of olives and related oils of three autochthonous Sardinian cultivars, Sivigliana da olio, Semidana, and Corsicana da olio. We evaluated several parameters in olive fruits (dry matter, oil content, total soluble solids, total polyphenol and antioxidant activity) and oils (legal indices, total chlorophylls and tocopherols, single polyphenols and volatile compounds, antioxidant activity). The results obtained in olive fruits showed that all the parameters changed significantly during ripening and seem to confirm that the best harvesting time is that selected by the growers, that is when 70% of olives has just turned dark-colored and the rest is green.

This work assesses the efficiency of an innovative extraction plant (with low oxidative impact, heating of paste before malaxation and a special decanter that avoids the final vertical centrifugation) in terms of oil yield and quality, and economic and environmental impacts. Economic and environmental impacts were evaluated by using both life cycle costing and life cycle assessment methodologies. A sensitivity analysis was also performed to highlight the uncertain factors that may strongly affect the results. Findings showed that olive milling with the innovative plant resulted in olive oil with a significant increase in quality, although the extraction yield was significantly higher when using conventional technology. In terms of environmental results, an average growth of 4.5% of the impacts in all categories was reached.

Introduction Storage is a very important step of any food, including olive oil. In fact, olive oil shelf life can be influenced by different factors, from olive quality to processing technologies, however, the selection of proper storage conditions, including packaging, can be of great importance. The Mediterranean diet is recommended as food model for the prevention of various chronic-degenerative pathologies (cardiac diseases, cancer etc.) and olive oil is surely the cornerstone of this type of nutrition with fruits, vegetables, legumes and fish. Its peculiar nutritional characteristics depend on the presence of antioxidant components and monounsaturated fatty acids that are predominant on unsaturated ones, with positive results in the increase of HDL (High-Density Lipoproteins) and reduction of LDL (Low- Density Lipoproteins) oxidation. The consumer expresses its judgment on olive oil quality considering only some sensory characteristics, such as the more or less pungent taste, fruity and mild flavour and within this context a wide range of preferences can be found, because the sensory quality may match specific dishes, cultural aspects or simple dietary habits. Incorrect storage practices influence the sensory quality of the oil, as rancidity and off-flavours may develop. The lipid oxidation, in fact, is one of the factors of olive oil quality deterioration. The rate of oxidation depends on the availability of oxygen, the presence of light and the temperature. In absence of light, the auto- oxidation follows a free radical mechanism with the formation of hydroperoxides.

    THE EVOLUTION OF THE SYSTEM OF OLIVE OIL EXTRACTION FROM THREE PHASES TO TWO PHASES The heart of the continuous extraction system lies in the horizontal decanter, where the crushed and liquefied paste undergoes centrifugal action. The principal characteristics of the three-phase extraction system are, for every one hundred kilos of olives processed, the addition of about 35-55 lt. of hot water into the decanter and the production of solid waste (pomace) with 50% humidity and approximately 90-110 lt. of vegetation water. The most pressing problem of the three-phase centrifugal extraction system consists of the production of great quantities of waste water and the difficulties encountered in disposing of them. The vegetation water, in fact, is highly acid and toxic for plants, owing to its chemical composition. Therefore, before it is used in fertigation and sprayed on fields, certain agricultural and legislative issues must be considered. Environmental and economic requirements led, during the early ‘90s, to the perfection of a new-generation centrifugal extraction system, that was capable of eliminating the issues associated with vegetation water. This type of extraction, known as the “two phase” or “integral method”, makes it possible to eliminate the use of process water, so indispensable in the three-phase system, with the double advantage of limiting the use of natural resources (water) and eliminating the production of waste water, whose disposal adds considerably to the running costs of olive mills. In two-phase extraction, the horizontal centrifuge is designed to have only two exits, so that the vegetation water is expelled together with the solid waste (pomace) while the oil is expelled from the other end.

    SPANISH OLIVE OIL PRODUCTION Spain, occupying 85% of the Iberian Peninsula, is one of the largest countries in Europe with 194,885 square miles of territory; one third is agricultural. The Mediterranean Sea is on the south, the Atlantic Ocean on the north and west and the Pyrenees Mountains to the east. Between many of the mountain peaks, narrow valleys exist, but one of the most important topographical features is the great central plateau with an average elevation of 2,000 ft. above sea level. The climate is marked by extremes in temperature and low rainfall. Most of Spain receives less than 24 inches of rainfall on the average. At Madrid in the center of the country, winter cold is sufficient to freeze surrounding streams, while summer temperatures in Seville can rise as high as 120oF in the summer. The Mediterranean and Atlantic coasts however, offer great moderation in temperatures, which is important for production of olives, citrus, and various tree fruits and nuts. The country is divided into 50 provinces within 17 autonomous regions. The 40 million Spanish people are essentially a mixture of the indigenous peoples of the Iberian Peninsula with successive peoples who conquered and occupied the peninsula for extended periods. Most of the people speak Castillian Spanish. In addition, Catalan is spoken in the northeast, Galician in the northwest, and Basque in the north. Spain has traditionally been agricultural, but since the mid 1950's industrial growth has been rapid. In 1986, Spain became a full member of the European Community (now the EU), which has elevated the economy.
