Be careful making this with small children: it does involve a lot of stove work and very hot liquids, but with delicious results. • 2 bags microwave popcorn (this works better with salted What You Need but unbuttered, or only lightly buttered, popcorn) • Large bowl • 2 sheet pans • 1 stick of butter • Parchment paper • 1 cup packed brown sugar • Large pot • Rubber spatula • ¼ cup light corn syrup • ½ teaspoon salt • 1 teaspoon vanilla • ½ teaspoon baking soda 1. Pop the popcorn and place in a large bowl to cool. Remove all un-popped kernels! 2. Line two large sheet pans with parchment paper and set aside. Preheat oven to 200°F. 3. In a large pot, melt the butter on medium heat until just melted. 4. Add brown sugar, corn syrup, salt, and vanilla, stirring continuously until the mixture starts to boil. 5. Cook for 5 minutes. No stirring! 6. Take off the heat and add the baking soda (it should froth up). Stir well. 7. Slowly add the caramel to the popcorn (making sure you first removed all the unpopped kernels). Stir with your spatula after every addition to make sure all the popcorn gets evenly coated. Turn out onto parchment-paper-lined pans and spread evenly. 8. Bake in the oven at 200°F for 1 hour.

(Video) Each year on April 6th, National Caramel Popcorn Day conjures up memories of fairs, sporting events, and fun snacking. Combining popcorn and molasses began in the early 1800s. However, caramel was prevalent as well, and with the production of Cracker Jack, the popularity was ever-increasing. Invented by Frederick Rueckheim, the popcorn merchant dabbled with creating a new snack. An immigrant from Germany to Chicago, he enlisted his brother, Louis, to help. After adding molasses and nuts, their snack was ready for an introduction to the masses. Like many famous foods, Cracker Jack gained popularity on the stage of the 1893 World’s Fair. After someone who sampled the product exclaimed “That’s a crackerjack!” (which at the time meant “of great quality”), the name stuck and in 1896 the brothers registered Cracker Jack ® and began mass producing the snack. In 1908, something happened to connect Cracker Jack and baseball permanently in the American psyche, while also launching the business into high gear. A young entertainer by the name of Jack Norworth penned a catchy tune referencing Cracker Jack and the American pastime. The song “Take Me Out To The Ballgame” not only caused sales of the snack food to soar but the fans of the game continue to sing the song at every game. Over 200 million boxes of Cracker Jack caramel-coated popcorn are consumed every year in the U.S. alone.     The History of Candy Coated Popcorn Patents on file in the United States Patent Office during the Civil War era are the best sources for early information on the Popcorn Business. Our files contain 1920’s literature with the headline: “Kingery – the best in Popcorn equipment since 1871!” Or, “Caramel Crisp – the complete Candy Coated Popcorn concept” established in 1880 by Mr. H.Z. Long of Springfield, Ohio! Or, “Dunbar - Chicago - Founded 1900!” Actually, Southwester Ohio predates the “Chicago era” several years. Who were these pioneers? The Kingery Manufacturing Company was founded in Cincinnati, Ohio – our records show that as of 1929, they were located at 420-426 East Pearl Street in Cincinnati – that is now safely tucked about 30 feet beneath the Ft. Washington Way – the I-71 US 50 downtown distributor here in Cincinnati. Like so many others, they manufactured a natural gas or gasoline heated, rotating cylindrical screen in which was placed kernels for popping. These were the original “dry poppers” – “wet poppers” had not been invented at that time. Also in Southwestern Ohio in Springfield, along around 1880, Mr. H.Z. Long took a slightly different tack – he modified the early rotary dry poppers – put together a complete store package – added the name “Crispette” for a molded 6” diameter by 1” thick popcorn disc. He basically “licensed” the use of the “Caramel Crisp” and “Crispette” names in cities all over America. Neither the Kingery Company nor the Long-Eakins Company ever recovered from the crash of 1929. Both struggled through the depression – and, by 1940 were virtually out of business.
