Tiffany’s Paper Flowers: The recent debut of chief artistic offi cer Reed Krakoff’s fi rst jewelry collection for Tiffany & Co. is being touted as the brand’s most signifi cant launch since Tiffany Keys in 2009. The Paper Flowers collection of fi ne and high jewelry imagines the possibilities when fl owers are “distilled to pure essence—not elaborate, not showy, and in their clarity and refi nement, distinctly American.” Krakoff, who made a name for himself at Coach, incorporates precious stones and high-quality materials to create abstract petals amid striking concepts—but with an emphasis on style that jewelry lovers “can live with every day.” He calls the pieces “fl owers of the imagination, as though a bloom has been scattered by the wind and pinned back together.” See for yourself at Tiffany & Co. stores at Aventura Mall, Bal Harbour Shops and the Design District in Miami to the south, and its Worth Avenue location in Palm Beach to the north.

LMGFL.COM | JUNE 2018 41 BarTalk Strange Brew THE TART ALES AT ODD BREED HIT THE RIGHT NOTES BY DEFYING THE NORMS t fi rst blush, the idea of a sour-tasting Abeer sounds more like a barley-and-hops mixture gone bad than an intentional fl avor. But unusual is the norm at a Pompano Beach brewery that even celebrates such eccentricities in its name. The aptly branded Odd Breed Wild Ales (50 NE First St., 754.220.6099, oddbreed.com), which opened its doors in November, boasts a menu of creations that speak to its unconventional brewing techniques. Odd Breed prides itself on its unique fermentation and aging process to produce ales with intriguing notes and a tart fi nish. From barrel to bottle, nothing about Odd Breed is ordinary—including the use of the bacteria Brettanomyces, a “funk mingle” commonly referred to as “Brett”—to ferment its beers. “Most [conventional] brewers would die if they found Brett in their brewery,” says owner Daniel Naumko. The bacteria continue to ferment even after they’re packaged, which can cause bottles to explode. However, Naumko and partner Matt Manthe strategically use Brett to create the notable sour taste found in their ales. Odd Breed brews its beer offsite, at local breweries such as Boca Raton’s Barrel of Monks and Pompano’s 26 Degree Brewing. The beer is then transported back, where it undergoes slow fermentation in barrels that AD lasts anywhere from seven to 16 months (unlike the three to four weeks of a standard brewery). From there, Naumko and Manthe implement dry-hopping—a technique that involves adding hops to beer without boiling it—to amplify fl avor. Then, they add fruits to create additional taste, giving the ales a fl avor profi le with three main variables: sourness, hops and citrus. The result is an offering like Broken Tail, a tart-and-tropical wheat ale with Indian coriander and Florida orange zest; or Juni Per Se, a mixed-culture Saison refermented with blue juniper berries. Because of Naumko and Manthe’s improvisational nature in crafting new fl avors, don’t expect to fi nd the same list of draft beers and bottles upon each visit to Odd Breed. The owners welcome inconsistency by conjuring up a new menu as they go. “We’re not trying to brew the same beer every time,” Naumko says. “We’re trying to brew exciting base beers, put them in the barrels, hit ’em with a mix culture, and then taste them along the way.” —CARLY RUSSO/ PHOTO BY EDUARDO SCHNEIDER

Creativity in action: The test kitchen that Duffy’s opened in Lake Worth two years ago gives chef Eric Parker a place to perfect new menu items; and it gives the corporate team a 3,000-square-foot space (designed to replicate Duffy’s interior vibe) for special events, training, company Legacy Lives On meetings and more.

PAUL EMMETT’S RESTAURANT VISION, DUFFY’S SPORTS GRILL, CONTINUES TO EXPAND UNDER SON JASON BY KEVIN KAMINSKI / PHOTOS (EXCEPT FOR LOBSTER ROLL) BY EDUARDO SCHNEIDER

t started in 1985 as Duffy’s Drafthouse in Lake Park, a modest concept with four featured sandwiches and, by the time it drew I Paul Emmett’s attention, four restaurants in the mix. But Paul, who bought a controlling interest in 2001, saw beyond the hot ham and cheese and ice-cold beer on tap that the Drafthouse touted. He changed the concept to Duffy’s Sports Grill in 2003, capitalizing on the diverse base of sports fans in South Florida (even though Paul confessed to being clueless about sports). He brought a food-fi rst philosophy to the menu with the help of corporate executive chef Eric Parker, who’s been with the company 22 years. And he expanded the brand, turning Duffy’s into the largest family-owned restaurant company in the Southeast. Most important, son Jason says, he infused his restaurants with core commitments to quality, value, hospitality and community—a combination that drives faithful customers to the 34 Duffy’s across Florida. How faithful? More than 600,000 members possess the famed Duffy’s MVP card, a loyalty program that gives customers access to coupons and discounts, call-ahead seating, Jason Emmett complimentary birthday gifts and more. It’s with great pride that Jason has carried forward—and expanded—Paul’s vision since taking over as company president after his father died from bile duct cancer in February 2015 at age 62. “He battled it for 18 months; you hope for the best, but he was realistic,” says Jason, who worked with Paul for the better part of 12 years. “We used that time to prepare. He spent a lot of time making sure the company was solid, that the plan was in place. He did the hard work by establishing the foundation and corporate beliefs that, literally, are written on the walls of our restaurants. “I still see this as his company. I see myself as protecting his legacy Patience is rewarded: It took in everything we do.” Parker and his team a year to perfect To that end, Jason, who cut his Duffy’s teeth as general manager of the sauce on Duffy’s wildly popular a struggling location in Boca Raton (which he turned around), always Korean ribs and wings. “The base is a keeps one eye on the changing casual dining habits of his customers. special paste made from soybean, chili Some of those adaptations, as you’ll see on the opposite page, result and rice,” he says. “We added about in new or recurring dishes that Parker presents as part of Duffy’s nine ingredients—including brown limited-time offers. On the horizon: The busiest Duffy’s continues to be the 22,000-square-foot waterfront restaurant in North Miami Beach that opened in 2011. WHY GO: At one time, this was the place for glitter and celebrity glam of a bygone era. Judy Garland once sang in the hotel café; years later, her daughter, Liza Minnelli, teamed up with Sammy Davis Jr. to perform for a crowd of 3,000. Today, The Diplomat is a jaw-dropping ode to contemporary beach chic, thanks to a facelift (completed in 2017) that took almost three years and cost $100 million. Some 1,000 rooms were updated, including two presidential suites, 515 king rooms and 484 double rooms. The place can still name-drop: Fashion designer Trina Turk put her stamp on four of the Diplomat’s 26 cabanas, and, internationally known celebrity chefs Geoffrey Zakarian and Michael Shulson are responsible for the menus and atmospheres at two of the 10 escapes restaurants. Shulson’s is Japanese-inspired Monkitail, while Zakarian’s Point Royal serves up coastal fare such as crab, shrimp and oysters. Local boaters can leave the car at home and dock at the Diplomat Landing’s seven-slip marina. SUMMER SPECIALS: “Take a Road Trip to the Beach” includes up to 10 percent savings for Florida residents. The Diplomat also recently introduced its “Burn and Brunch,” a monthly series of workouts with local fi tness instructors—followed by a buffet brunch at Point Royal. CONTACT: 3555 S.
