Collagen (white) 2. Elastin (yellow) Upon application of heat, collagen is converted to gelatine, which make s the meat tender and edible. Whereas, the elas tin hardly gets affected by heat. Either it has to be removed or broken down by pounding in order to make the meat edible. The higher/larger animals hav e larger muscle fibres and hence takes more time to cook. Adipose tissues are in the form of fat. It is necessary as it lends flavo ur, moistness and softness. The fat formed between the skin and the flesh is known as Lard; which may be used as a cooking medium and also in making of kebabs and other force meats. The desirable fat present betwee n the muscles is known as ‘Marbling/Marble.’ It is the inter layering of fat between the muscles, and the amount of marbling determines the quality of the meat. It is f ound as a shiny sheen or pecks (spots). Skeletal tissues are in the form of cartilages, tendons, ligaments, soft bonnes, which basically join the bone and the flesh .

With the growing internationalization of Hong Kong, a new breed of restaurant has emerged in Hong Kong. These are the authentic western restaurants. This type of restaurant by definition is very different from the traditional Chinese restaurant that Hong Kong has been so famous for. It is also quite different from the localized "home-grown" western restaurant which have been the standard bearers in the past 2 0 to 30 years. We are beginning to see the emergence and a gradual proliferation of this type of restaurant. It is therefore high time for us to conduct a study on this type of restaurant. By type of ownership, restaurants in Hong Kong can be segregated into three distinct types. Those owned by hotels, those owned by conglomerates and those that are run privately, with the latter group being the target group of our study. As independent restaurateurs, these people are by definition entrepreneurs. How then do they measure individually, and as a group, on entrepreneurial tendency ? Contact: [email protected] Cooking class: The rise of the “foodie” and the role of mass media Introduction In the U.S. there are two cable TV networks dedicated wholly to food and cooking. In 2012, the Food Network had a nightly average of 1.1 million viewers.1 Small kitchen appliance expenditures continue to increase, 2 and despite the demise of the venerable Gourmet Magazine in 2009, there are hundreds of print magazines and countless blogs to refer to when looking for recipes or food writing. These and many other indicators seem to incontrovertibly charge Americans with being a nation consumed, as it were, with food. But what does this evidence tell us? Is interest in food a modern day phenomenon? Does all of this consumption around the subject mean that we are cooking more than ever before? While there is a plethora of popular media on the topic of food, here we can observe the topic – especially the phenomenon of food television – from a more critical vantage point and ask some basic but perhaps ultimately complex questions in order to illuminate the role of “mediated” food in our modern lives.
