PRO GOLF Right on par for British Open Spieth feeling rested and sharp in pursuit of yet another major

BY DOUG FERGUSON AP Golf Writer

SOUTHPORT, England — With a chance to close out the match, Jordan Spieth fired his second shot into the par-5 15th at Royal Birkdale and it never left the flag, bounding onto the green about 20 feet behind the hole. His partner Tuesday was Justin Thomas, who watched the flight of the ball and said, “I like having him on my team when he’s playing like this.” Everyone is on their own when the British Open begins on Thursday, and Spieth is looking sharp enough to be listed as a co-favorite with Dustin Johnson, the No. 1 player in the world. Spieth is coming off his second victo- ry of the year last month at the Trav- elers Championship. And when his putter is working — it really hasn’t been this year — he is regarded as a favorite at just about any tournament. Still to be determined is how much he thrives on links courses like Royal Birkdale. Stone Fruit Almond Upside-Down Cake is awesome served hot or cold

BY SARA MOULTON Via The Associated Press his recipe for Stone Fruit Almond Upside-Down TCake works equally well using any kind of stone fruit or a mix of every kind of stone fruit, including plums, apricots, nectarines, peaches and plum- cots.

The appeal of the mixed-fruit ver- sion — the rainbowlike beauty of the unmolded cake in concert with the rich chord of its flavors — edges out the monochrome visuals and taste of a cake made with just one kind of fruit. I have specified using firm, ripe fruit for this recipe. If the fruit is very ripe, it'll be too ripe — mushy and difficult to slice. However, very firm, unripened fruit will work well, too. Bak- ing those guys simultaneously tenderizes them and amps up their flavor. The only hurdle when cooking with stone fruit is de-ston- ing it. The best way to do the job is to slice around the natural In the seam, preferably with a serrated knife. Then you twist the two halves apart to expose the pit, much as you would with an avoca- do. Lastly you pluck out the pit with your fingers, if it's loose Mood for enough, or scoop it out with the aid of a melon baller. Now it's easy to rest the two halves flat on the counter and slice them into wedges. The heart of this recipe's allure hinges on the contrast between Great the fruit's tartness and the cake's sweetness. That sweetness re- sides in the almond paste, so be sure not to use marzipan, which is much more sugary and would make the cake cloyingly sweet. This cake is a cinch to throw together using a mixer, but the in- Food ! gredients should all be at room temperature to develop the prop- er texture. If you're able to prepare and serve this cake while it's still hot, your guests will really be wowed, but it's plenty tasty at room temperature, too. Either way, don't forget to top it off with vanilla ice cream or whipped cream.
