The higher the polishing rate tends to mean the more premium the quality & a more refined taste. A cleaner & sharper finish is created on the palate – eliminating fats, proteins & amino acids that result in unwanted flavours & aromas. Sake tasting set A selection of premium japanese sakes ranging from semi dry, dry and super dry. 3 glasses, 60ml each 30 House Specialty Sake Located at the base of akagi mountain in the middle of the main island of japan, this sake brewery is a family owned & operated business. in making this sake they use spring water from the mountain that is very smooth & the sake has a dry finish. This is the first overseas export for this sake, so we are very proud at azuma japanese restaurant to have the opportunity to offer it to our guests. bottle | carafe 150ml Akagisan Junmai Ginjo 720ml Gunma Japan 110 25 Junmai 純米 Junmai-shu are made only from rice, koji and water, highlighting the flavour of the rice and koji more than other varieties. PinotFile© The FIRST Wine Newsletter Exclusively Devoted to Pinot Noir PEE - no - NWAH in French PEE - no - NWAR in American Fair Dinkum Pinot Noir Aussie Pinot Noirs have never garnered much attention with the popularity Volume 3, Issue 47 of the country’s Shiraz and stickies. However, there are several small pro- July 19, 2004 ducers in the southern Victoria region of Australia that have found the right cool-climate terroir to produce Pinot Noirs that are bonzers (great, ripper). Three of the best are highlighted here. Phillip Jones retired in the late 1970’s to handcraft tiny amounts of Pinot James Halliday on Noir in South Gippsland, Victoria (see map page 2). Named after early Bass Phillips: “Tiny explorers of the region, George Bass and Arthur Phillips, Bass Phillip is quantities of some of the most exciting close to the sea, but far enough inland to provide an ideal climate for Pinot Noir to be growing Pinot Noir. With a very low cropped dry-farmed vineyard (four made in Australia times the average Australian vineyard planting density) yielding less than came onto the mar- 1 ton to the acre, production is limited to a few hundred cases a year. ket in late 1990. The Jones is a fanatic about fruit quality, hand-sorting individual bunches and wines have tremen- dous concentration discarding up to 30% of substandard fruit in some years. The winery is of flavor, power, and gravity-fed, the winemaking process holistic with minimal additives, natu- length, yet retain the ral yeasts, and no filtration. The resultant wines have no equal in Australia.

  • The Wine Journey
The Wine Journey “Wine is art, and like other art forms, it has the ability to take us out of ourselves: transporting the taster on an imaginary journey around the world, and back in time. Giving pleasure to the senses, it widens our horizons...” MB From vineyard to the glass, join us on a journey of some of the best wine regions of the world. Our wine list of 1000 selections encompasses what is one of Australia’s largest collections of fine wine in an international hotel. Our sommeliers & wine waiters are pleased to offer advice as well as to fulfil your requests; explore some of the best Australia has to offer and many great and difficult to find bottles from throughout the world. A neatly stacked barrel room at Housed in climate controlled cellars Laherte Freres Champagne house. within Hilton Sydney and glass brasserie’s 3500 bottle wine wall; to the best of our ‘Hall of Fame’ knowledge, the wines in our collection ‘Best International Hotel Wine List’ Australia’s Wine list of the Year Awards 2018 have been kept under controlled temperatures and humidity since their ‘WineReader’s Choice Award’ Australia’s Wine list of the Year Awards 2014 release, and many come direct from the winery, estate or Château. ‘Best Listing of Australian Wines’ Australia’s Wine list of the Year Awards 2013 Carefully sourced; we believe each of ‘Best Wine List New South Wales’ our older ‘museum’ bottles to be sound; Australia’s Wine list of the Year Awards 2012 however each bottle has its own history.
