For several decades, asking for a glass of Cha- blis was practically a reflex among American wine drinkers. What they received usually wasn’t Chablis at all but an off-dry Chenin Blanc or Co- lombard blend dispensed from a 3-liter jug. This wine experience did nothing to enhance the rep- utation of one of France’s greatest white wines. Real Chablis comes from the region of the same name, located east of Auxerre in northern Elegant Burgundy. The grape is solely Chardonnay, but the resulting wine is different from the California Not the knock-off French version. The French climate is much cooler, al- Chablis lowing the grapes to retain more acidity; the soil white of days gone by, but has more mineral content, giving the wine a flinty flavor profile; and, most important, oak is used the flinty, fresh real deal sparingly or not at all in the winemaking process. BY MARK SPIVAK Even though the finished wine displays classic Chardonnay flavors of citrus, melon, and pear, Chablis is a nuanced wine rather than “oak juice.” The region’s top producers are generally ac- knowledged to be Dauvissat and Raveneau. Both have significant holdings in Premier Cru and Grand Cru vineyards and were among the earliest properties to bottle their own wine rather than sell the grapes to merchants. Dauvissat ma- tures wine in barrels, while Raveneau does not. Prices tend to be steep. While the entry-level Chablis-grown grapes exhibit wines from Dauvissat start below $50, Premier classic Chardonnay flavors, but unlike most California Chardon- Crus average around $75, and Grand Crus are nay, these wines spend little or no easily twice as much.

    PETER DRY Franciacorta shines with Chardonnay HERE IS Franciacorta? You might well ask. Outside of Italy the region and its wines are W virtually unknown. Although wine has been produced here since ancient times, the modern wine indus- try is young by Italian standards. Until the 1960s, the pleas- ant but undistinguished table wines of the region were con- sumed locally. Today, the region is synonymous with high quality sparkling wine. The development of the sparkling wine industry here is an interesting case study because it appears to have been one of those rare instances where the end product was chosen before the suitability of the grape material had been confirmed. For example, two major Italian wine companies, Bellavista and Ca’ del Bosco, decided to invest in the region (for economic reasons) in order to expand their production of sparkling wine. The market demand for the resultant product was good and, fortuitously, the region turned out to be a good location for Chardonnay grapes for sparkling wine. The vineyards of Franciacorta are found in rolling hills to the south of Lake Iseo in central Lombardy, 20 km Peter Dry west of Brescia and 60 km east of Milan. In addition, clarity and colour stability (absence of haze development and the retention of colour) are generally considered to be pre-requisites to market success. Achieving the optimum levels for each of these parameters is often done at significant cost using current technology and does not always ensure the wine will meet its full potential. The ability to modulate these characteristics of wine while retaining the ability to economically process the wine to ensure microbial stability and stylistic integrity is a significant challenge for the wine industry. This project focused on the key compositional drivers behind texture, bitterness, clarity, stability (protein and colour) and wine filterability and developed strategies to modulate them in a production-based environment. Specifically, it covered molecular drivers of taste and texture, ‘smart’ surfaces for efficient production, predicting haze formation, understanding and preventing wine haze, effects of filtering red wines, solids management effects on white wine style and composition, impact of winemaking methods on wine macromolecules and texture, colour development/management and a practical method to determine extractable grape colour and tannin.
