An All-American Favorite: Boston Baked Beans From a Keenager Reader, July 1976 Our Tradition begins 1 1/2 lbs. (3 cups) Dry pea beans or 1/2tsp. Salt Navy beans 1/4 tsp. Pepper with an ending . . . 3 qts. Cold water 1/4 lb. Salt pork, diced 3/4 cups Dark molasses 1 Onion, chopped 2 tsp. Dry mustard

PREPARATION Rinse beans in kettle and add cold water. Bring to a boil; simmer 2 minutes. Remove from heat. Cover and let stand 1 hour. Bring mixture to a boil. Lower heat and simmer about 1 hour, or until beans are tender. Drain, reserving liquid. In bowl, combine molasses, mustard, salt, pepper, and 1 1/2 cups reserved cooking liquid. In Dutch oven, combine beans, salt pork, and onion. Stir in molasses mixture. Cover, and bake 3 1/2–4 hours, stirring occasionally.
