EASY Eats! by Sharon Arthur Moore Cranberry Cake for Your Holiday Entertaining or Just for You! This is the time of year, in past years, when I’d be whipping up cookies and cakes and candies to give away or to serve when guests dropped in or when we had a big party. Those were the days, right? Well, since we have greatly curtailed our social interactions, I have simultaneously cut back on baking. But not completely. I do have a freezer. Someday we’ll be entertaining again, and I’ll be ready! Cranberry Cake (serves 8-12) ½ cup butter, softened to room temperature Preheat oven to 350 degrees. Spray bundt (or tube) pan with non-stick cooking 1 cup white sugar spray. Stir the cranberry sauce and set aside. In a large bowl, cream the butter and sugar until smooth and fluffy. Add eggs and beat on medium speed. Add 2 large eggs in almond extract. Slowly add 1 cup of flour and ½ cup of yogurt. Beat until 2 teaspoons almond extract combined well. Add remaining cup of flour and yogurt and beat well. Stir in 2 cups self-rising flour almonds and dried cranberries. Ladle 1/3 of batter into the bundt pan. Spoon 1 cup plain Greek yogurt on ½ of whole cranberry sauce. Top with 1/3 of batter. Spoon on the remainder of the whole cranberry sauce. Top with remainder of the batter and smooth ½ cup toasted almond slivers the top to be even. Bake for 55 minutes until golden brown and a tester show ½ cup dried cranberries the cake is done. Cool for 5-10 minutes. Turn out onto a platter and let the cake 1-14 ounce can whole cranberry sauce cool to room temperature.
