Cut and discard tops from peppers; remove seeds. In a large bowl, mix beans, cheese, salsa, onion, corn, rice, chili powder and cumin; spoon into peppers. However, data are scarce regarding the effects of nationwide meat reduction campaigns. We described and analyzed the correlates of a national campaign in France (called “Green Monday”, GM) promoting the weekly substitution of meat and fish by other nutrients. Two cross-sectional online surveys were compared: a National Comparison sample (NC) of the French general population and a self-selected sample of participants who registered for the Green Monday campaign. A follow-up study was carried out in the GM sample, in which participants were asked during 15 weeks whether or not they had substituted meat and fish. There were 2005 participants aged 18–95 (47.7% females) in the NC sample and 24,507 participants aged 18–95 (77.5% females) in the GM sample. One month after the beginning of the campaign, 51.2% of the respondents reported they had heard about Green Monday in the NC sample, and 10.5% indicated they had already started to apply Green Monday. -

Save time and effort One of the main attractions for many is the ease of a slow-cooker so when you’re looking for recipes, avoid those that suggest a lot of prep. For many dishes, particularly soups and stews, you can really just throw all the ingredients in. It can be nice to cook the onions beforehand as the flavor is different when you put them in raw, but experiment both ways as you may find you prefer one. IT can also be good to brown meat to give it some color but this is not essential. 2. Get ahead If you’re short on time in the morning, prepare everything you need for your slow-cooked meal the night before, put it in the slow-cooker, cover and store in the fridge overnight. Ideally the dish should be as close to room temperature as possible, so get it out of the fridge when you wake up and leave it for 20 minutes before turning the cooker on. If you need to heat your dish beforehand, then put the ingredients in a different container and transfer them in the morning. 3. Save money Slow cookers are great for cooking cheaper cuts like beef brisket, pork shoulder, lamb shoulder and chicken thighs. You can also use less meat as slow-cooking really extracts a meaty flavor that permeates the whole dish. Bulk up with vegetables instead. 4. Trim the fat You don’t need to add oil to a slow cooker; the contents won’t catch as long as there is enough moisture in there. -

EFFECTS OF BRINE TEMPERATURE ON HAM AND BACON PROCCESSING CHARACTERISTICS BY BENJAMIN COLE PETERSON THESIS Submitted in partial fulfillment of the requirements for the degree of Master of Science in Animal Sciences in the Graduate College of the University of Illinois at Urbana-Champaign, 2016 Urbana, Illinois Adviser: Assistant Professor Anna Dilger Abstract Prior to the invention of refrigeration, the addition of salt during meat processing was used for meat preservation. Present day, cured meats have a combination of salts and sodium nitrite that will inhibit most psychrophilic flora (spoilage bacteria) thus increasing shelf life of products. Thermal processing of meat products to an internal temperature of 65˚C to 77˚C is sufficient enough to kill most harmful microorganisms. Brine chillers are used in industry to keep cure at a cool, constant temperature. If brine temperature exceeds 10˚C, along with the addition of erythorbate, there will be a rapid reduction of nitrite to nitric oxide gas which will escape before brine injection. With brine temperatures below 10˚C, the reduction of nitrite to nitric oxide to nitrosylhemochrome will remain in the brine without evaporation, allowing a greater amount of nitrite in the brine available to cure the meat. Research has been conducted at the University of Arkansas on the effects of brine and ham temperature on injection yield, instrumental color, tenderness, and sensory characteristics of cured hams; however, no research has been conducted on the effects of brine temperature on ham and bacon processing and sensory characteristics. Therefore, two experiments were conducted to evaluate the effects of brine temperature on ham and bacon processing characteristics as well as an additional experiment designed to test the effects of a brine and ham temperature combination on processing characteristics.
