Rack of Lamb

Traditions 1 Rack of Lamb (frenched) 1 tsp Fresh Rosemary ¼ cup Dijon Mustard 1 tsp Fresh Basil ½ cup Bread Crumbs 1 tsp Granulated Garlic 1 tsp Fresh Thyme (chopped) Salt/Pepper to Taste

Heat 8" sauté pan on med-high heat, add oil to cover bottom of pan. After pan gets hot (about 2 minutes), sprinkle lamb with salt and pepper, then sear both sides of the lamb about a minute to a minute and a half.

Then remove from pan and place in cooler (refrigerator). While the lamb is cooling, chop the thyme, rosemary and basil. Add the herbs to the bread crumbs with the granulated garlic.

After the lamb has cooled, then spread a light coating of Dijon mustard all over the lamb. Then coat the lamb with the herbed bread crumbs.

Preheat oven @ 325 degrees. Place lamb on a sheet pan with a roasting rack. Bake for about 15 minutes, or to desired temperature. Serve with your favorite starch and vegetables, sauce is optional.
