Gluten Free Citrus Pudding

Ingredients 180g butter

1 ½ cup caster sugar

6 eggs, separated – make sure no egg yolk mixes with the egg white – keep in separate bowls

1 tsp vanilla

90g Gluten Free Self Raising Flour

3 cups Farmdale milk finely grated rind 2 lemon finely grated rind 2 orange

1/2 cup lemon juice (approx. 2 lemon)

1/2 cup orange juice (approx. 2 orange)

Method

 Preheat oven to 160°C (325°F).

 Prepare two medium-sized casserole dishes by spraying with cooking spray.

 Cream butter, sugar, eggs yolk and vanilla. Stir in flour, milk, lemon juice, orange juice and lemon and orange rind.

 Place egg whites into a clean, dry bowl. Beat until stiff. Lightly fold into lemon mixture.

 Pour into prepared dishes.

 Place into a moderate oven and bake for approx. 35 minutes or until cooked when tested.
