Gluten Free Citrus Pudding
Ingredients 180g butter
1 ½ cup caster sugar
6 eggs, separated – make sure no egg yolk mixes with the egg white – keep in separate bowls
1 tsp vanilla
90g Gluten Free Self Raising Flour
3 cups Farmdale milk finely grated rind 2 lemon finely grated rind 2 orange
1/2 cup lemon juice (approx. 2 lemon)
1/2 cup orange juice (approx. 2 orange)
Method
Preheat oven to 160°C (325°F).
Prepare two medium-sized casserole dishes by spraying with cooking spray.
Cream butter, sugar, eggs yolk and vanilla. Stir in flour, milk, lemon juice, orange juice and lemon and orange rind.
Place egg whites into a clean, dry bowl. Beat until stiff. Lightly fold into lemon mixture.
Pour into prepared dishes.
Place into a moderate oven and bake for approx. 35 minutes or until cooked when tested.
