<p>Gluten Free Citrus Pudding</p><p>Ingredients 180g butter</p><p>1 ½ cup caster sugar</p><p>6 eggs, separated – make sure no egg yolk mixes with the egg white – keep in separate bowls</p><p>1 tsp vanilla</p><p>90g Gluten Free Self Raising Flour</p><p>3 cups Farmdale milk finely grated rind 2 lemon finely grated rind 2 orange</p><p>1/2 cup lemon juice (approx. 2 lemon)</p><p>1/2 cup orange juice (approx. 2 orange)</p><p>Method</p><p> Preheat oven to 160°C (325°F).</p><p> Prepare two medium-sized casserole dishes by spraying with cooking spray.</p><p> Cream butter, sugar, eggs yolk and vanilla. Stir in flour, milk, lemon juice, orange juice and lemon and orange rind.</p><p> Place egg whites into a clean, dry bowl. Beat until stiff. Lightly fold into lemon mixture.</p><p> Pour into prepared dishes.</p><p> Place into a moderate oven and bake for approx. 35 minutes or until cooked when tested.</p>
