It is fruity and floral and carries a lovely freshness 125ml £ 3 . 2 5 250ml £6 750ml £ 1 7 VERDEJO/VIURA, PASO A PASO (LA MANCHA) This exquisite white from Bodegas Volver is a delight, using only the finest grapes from La Mancha, and two varieties, means this wine is a perfectly blended and deeply enjoyable addition to our list. Well balanced with tropical flavour owing to its Mediterranean roots 125ml £ 3 . 5 250ml £ 6 . 7 5 750ml £ 1 9 CHARDONNAY/VIURA, LOLA BLANCO (CAMPO DE BORJA) A versatile semi-deulce wine from DO Campo de Borja thanks to a collaboration of Delgado Zuleta and Bodegas Aragonesas. This wine is easy to drink and perfect to share with friends 125ml £4 250ml £ 7 . 5 750ml £ 2 1 ALBARINO, COVIAR ( RIAS BAIXAS ) Made by the brilliant Paco & Lola with hand picked grapes frown in Salnes Valley, Galicia, north west Spain. Pear, citrus and green apple flavours with floral hints, fresh and weighty with excellent balance. It’s mouth-wateringly delicious, crisp and full of flavour 125ml £4 250ml £ 7 . 7 5 750ml £ 2 2 SAUVIGNON BLANC, CUARENTA VENDIM I A S ( R U E D A ) The best grapes were sorted from these vineyards to produce about 5000 bottles of Cuatro Reyes Cuarenta Vendimas (40 harvests) by legendary winemaker Angel Calleja and his right- hand woman Elena Oyague. Aromas of medium high intensity with floral notes, intense herbal bottom with a hint of mint. Fresh and velvety 125ml £ 3 . 2 5 250ml £6 750ml £ 1 7 BOBAL, MADAME BOBALU (VALENCIA) Produced using the Bobal grape which is grown in limestone/clay soil in 25 year old vineyards then matured in French oak. Deep cherry colouring with notes of ripe, delicate fruit. Powerfully fruity in taste 125ml £ 3 . 5 250ml £ 6 . 7 5 750ml £ 1 9 MONASTRELL, LA TREMANDA (ALICANTE) Alicante is one of the oldest DO’s in Spain with wine made there for over 4500 years. La Tremanda has a high ruby colour and aromas of cherries and strawberries. There is a herby blend of rosemary, thyme and bay on the palate with a fresh and spicy finish 125ml £4 250ml £ 7 . 7 5 750ml £ 2 2 TORO, EL PICARO (TORO) Produced in small scale, sustainable and environmentally friendly methods, El Picaro is a deep cherry colour with violet edges. Intense aromas of dark fruits as well as mineral and vanilla notes. Both fresh and complex. Full bodied, tasty and a very good finish 125ml £ 4 . 2 5 250ml £8 750ml £ 2 3 5 WINES BY THE GLASS Rose wine by the glass TEMPRANILLO/GARNACHA, LOPEZ DE HARO ROSADO (RIOJA ALTA) A pleasant and well balanced wine which incorporates red fruits, floral notes and a slight banana aroma. With a fresh finish this is a great all round rosado 125ml £ 3 . 7 5 250ml £7 750ml £ 2 0 GARNACHA, LOLA ROSADO (CAMPO DE BORJA) Delicate, high intensity aromas reminiscent of fresh tropical fruits and aromas of rose petals. Elegant at the entrance harmonious, fresh and pleasant, with a silky and persistent finish 125ml £ 4 . 2 5 250ml £8 750ml £ 2 2 GARNACHA/VIURA/TEMPRAILLO, MUGA ROSADO (RIOJA) Salmon pink in colour and more structured than a typical rose. Intense aromas of exotic fruit, particularly raspberry, cherry and kiwi. On the palate, fresh and lively with good acidity. A wine full of finesse with a long, rich finish 125ml £ 4 . 5 250ml £ 8 . 7 5 750ml £ 2 4 Sparkling wine by the glass 1 + 1 + 3 (U MES FAN TRES) ORGANIC CAVA BRUT (CAVA) A great sparkling wine aged in the bottle for 12 months, its cleans and fruity on the nose with a soft and vintage frame. This Cava is a lively, tasteful and elegant, well bodied wine with fine and delicate natural bubbles. Easy to drink with a gentle dryness glass £5 750ml £ 2 4 1+1=3 (U MES FAN TRES) CYGNUS ROSE ORGANIC CAVA (CAVA) Passion and respect for the land shine through in this Cava. This brut rose, made with organic grapes, is sensual and delicate with scents of flowers and fresh fruits. Refreshing and long lasting glass £6 750ml £ 2 6 6 WINES BY THE GLASS Vintage wines by the glass VINTAGE RED WINE CHATEAU TALBOT, BORDEAUX SAINT JULIEN 1999 Talbot has a very interesting history, named after the Earl of Shrewsbury, John Talbot, who suffered defeat and death at the hands of the French with resulted in the Bordeaux vineyards being repatriated after 340 years of British rule. The ’99 Talbot offers a classic partnership of cabernet sauvignon and merlot. Structured and tannic, it’s best paired with hearty and flavourful meat dishes. Any type of steak makes for a classic pairing, equally welcome would this wine would be braised lamb or any type of smoked meat 50ml £ 8 . 5 100ml £16 750ml £ 1 0 0 VINTAGE WHITE WINE PIERRE ANDRE CORTON CHARLEMAGNE , COTE DE BEAUNE 2 0 0 4 This vineyard is located on the north of the Cote de Beaune, between the villages of Aloxe- Corton and Ladoix-Serrigny, on the heights of the mythical mountain of Corton. Bright and golden in colour with a nose of mandarin, orange blossom and candied lemon. Sharp, precise and serious with a great finish and incredible length. The delicacy of this wine means its best paired with shellfish, although poultry and veal also work well 50ml £8 100ml £15 750ml £95 7 GIN RECOMMENDATIONS Gins G W Y R G I N £3.2 ( 2 5 M L ) A delicious Welsh gin from the Gower gin company, made using a combination of eight botanicals – offering up liquorice and earthy fennel flavours, with a good whack of grapefruit and a dusting of cracked black pepper. An excellent balance of savoury and citrus sweetness. Pair with Fevertree Mediterranean tonic for exceptional results! HERNO OLD TOM £5.2 ( 2 5 M L ) From the Wedisg Herno distillers comes a sweet, lip smacking Old Tom Gin. They use the same botanicals as their Herno Dry Gin (also available) although they have dialled up the amount of meadowsweet used. After distillation a touch of honey and sugar are added giving it the classic sweetness expected of an Old Tom Gin. DAFFYS DRY GIN £3.2 ( 2 5 M L ) Previous winner of the ‘world’s best gin’ this fresh, smooth and truly original gin balances nine carefully chosen botanicals with its show stopping Lebanese mint, front and centre SIPSMITHS LONDON DRY £3.2 ( 2 5 M L ) Born out of a desire to see London dry gin production return to the city where its earned its name.

    PENDERYN PRESS PACK NOV 5TH 2018 PENDERYN WHISKY: 100 YEARS IN THE MAKING Penderyn Whisky is made at the Penderyn Distillery which is located in the southern foothills of the famous Brecon Beacons National Park, north-west of Cardiff, and north- east of Swansea. Small stills existed in Wales in the 4th century, but the last whisky officially distilled in Wales was produced by the original, but short-lived Welsh Whisky Company at the Frongoch Distillery in Bala, North Wales, which closed in the early 1900s. Other notable characters in Wales’ whisky past include David Lloyd George, the only Welsh Prime Minister of Great Britain, who introduced the ‘3 year/1 day’ rule for whisky maturing; and Evan Williams (from Dale in Pembrokeshire) who was one of the founders of the American Bourbon industry. The idea for Penderyn was conceived by a group of friends sitting around a pub table in The Glancynon Inn in nearby Hirwaun, who decided to re-introduce the lost art of whisky distilling to Wales when they bought an un-commissioned whisky still designed by Dr David Faraday, a descendant of the famous Victorian scientist, Michael Faraday. Their dream was to create a world class single malt whisky. On Thursday 14 September 2000 the first distillation was carried out. The whisky is distilled in a unique single column still, producing a flavourful spirit at 92% abv which is married with water from the Brecon Beacons. The late great Master Distiller Dr Jim Swan came on board in 2002 and his vision helped create Penderyn’s unique style.

PAGE2 What is Bourbon? “In brief, bourbon is a whiskey, made predominantly from corn and aged in new charred oak barrels. According to the United States government, bourbon sold in the United States must meet these requirements: 1. Made from a grain mixture that is at least 51% corn. 2. Aged in new charred-oak barrels. 3. Distilled to no more than 160 proof, or 80% alcohol by volume (ABV). In practice, most bourbon is distilled out at a lower proof than this. 4. Entered into the barrel for aging at a proof no higher than 125 (62.5% ABV). 5. Bottled at no less than 80 proof (40% ABV). Bourbon is, as noted, 51% corn. The remaining 49% includes other grains. Usually, those grains include wheat, rye, malted rye, and malted barley, in any combination. Some distilleries, though, have experimented with rice, oats, and other grains. Bourbon must be aged, but there are no specific requirements as to time.
