Chipotle Burrito Bowls

Ingredients for marinated chicken:

1 can green chiles 1 t. black pepper 1 t. cumin 1 T. oregano 6 cloves garlic ½ red onion, quartered ¼ C. vegetable oil 8 chicken breasts per class; diced Directions:

1. Put all of the ingredients except the chicken into a food processor and puree until smooth.

2. Coat diced chicken breasts and sauté in pan.

Chipotle Basmati Rice Ingredients:

2 t. vegetable oil or butter 1 T. fresh cilantro 1 1/3 C. white rice 2 C. water 1 t. salt 2 limes, juiced

Directions: 1. Heat oil or butter over low heat, stirring occasionally until melted. Add rice and lime juice and stir for one minute.

2. Add water and salt then bring to a rolling boil. After boiling, turn down to a simmer and cover until all the water is absorbed. (About 20 minutes.)

3. Add cilantro right before serving. Ingredients for Fresh Salsa:

2 tomatoes, diced 1/3 C. onion, diced 1 T. lime juice 1 T. dried cilantro Salt and pepper to taste

Directions:

1. Finely dice vegetables and mix everything together.

Guacamole Ingredients:

2 avocadoes 1 T. olive oil 1 T. lemon juice Salt and pepper to taste

Directions:

1. Cut avocados in half, removing the pits.

2. Spoon out the insides of the avocado and smash avocados until they have a smooth consistency.

3. Add remaining ingredients and stir, then serve.

Ingredients for Beans:

1 can black beans 1 can pinto beans

Directions:

Heat the beans in separate sauce pans. Keep them separated

Ingredients for Cheese:

1 block Monterey Cheese 1 block Mozzarella Cheese Directions:

Shred both cheeses and mix together in a bowl. ** Top burrito bowls with sour cream if desired
