<p> Chipotle Burrito Bowls</p><p>Ingredients for marinated chicken:</p><p>1 can green chiles 1 t. black pepper 1 t. cumin 1 T. oregano 6 cloves garlic ½ red onion, quartered ¼ C. vegetable oil 8 chicken breasts per class; diced Directions:</p><p>1. Put all of the ingredients except the chicken into a food processor and puree until smooth.</p><p>2. Coat diced chicken breasts and sauté in pan.</p><p>Chipotle Basmati Rice Ingredients:</p><p>2 t. vegetable oil or butter 1 T. fresh cilantro 1 1/3 C. white rice 2 C. water 1 t. salt 2 limes, juiced</p><p>Directions: 1. Heat oil or butter over low heat, stirring occasionally until melted. Add rice and lime juice and stir for one minute.</p><p>2. Add water and salt then bring to a rolling boil. After boiling, turn down to a simmer and cover until all the water is absorbed. (About 20 minutes.)</p><p>3. Add cilantro right before serving. Ingredients for Fresh Salsa:</p><p>2 tomatoes, diced 1/3 C. onion, diced 1 T. lime juice 1 T. dried cilantro Salt and pepper to taste</p><p>Directions:</p><p>1. Finely dice vegetables and mix everything together.</p><p>Guacamole Ingredients:</p><p>2 avocadoes 1 T. olive oil 1 T. lemon juice Salt and pepper to taste</p><p>Directions:</p><p>1. Cut avocados in half, removing the pits.</p><p>2. Spoon out the insides of the avocado and smash avocados until they have a smooth consistency. </p><p>3. Add remaining ingredients and stir, then serve.</p><p>Ingredients for Beans:</p><p>1 can black beans 1 can pinto beans</p><p>Directions:</p><p>Heat the beans in separate sauce pans. Keep them separated</p><p>Ingredients for Cheese:</p><p>1 block Monterey Cheese 1 block Mozzarella Cheese Directions:</p><p>Shred both cheeses and mix together in a bowl. ** Top burrito bowls with sour cream if desired</p>
