Kale and Sweet Potato Tacos (Makes 10 Tacos)

Kale and Sweet Potato Tacos (makes 10 tacos) Taco Ingredients: 1 large sweet potato 1 tbs. olive oil 1 tbsp. cumin Pinch of pepper Salt 2 small jalapenos ½ bag frozen corn 4 cups chopped kale 2 tbsp. Canola Oil/Corn Oil (this is for the pan, do not use olive oil here b/c it will burn) Whole Wheat Tortillas

Topping Ingredients: Lime (quartered) Shredded Cheese Salsa Any other taco toppings you love!

Directions: Preheat oven to 415 degrees. Chop sweet potatoes into small piece, coat with olive oil, cumin, a pinch of pepper and a pinch of salt. Place sweet potatoes on a baking sheet and cook 45 minutes. While sweet potatoes are cooking chop jalapenos and mix into a large bowl with corn. Clean and de-stem kale, and roughly chop and set aside. Once sweet potatoes have cooked through mix into the jalapeno and corn mix, and set aside. Heat a frying pan or electric skillet and pour in canola oil once pan is hot. Allow oil to warm for 1 minute, and then pour kale into the skillet. Stir in salt and cook down for about 2 minutes. Add in the sweet potato mixture, and cook for 2-3 more minutes (until sweet potato mixture is warm). The kale will start to burn, but that is okay, the crisp edges give it extra taste! Scoop filling into tortillas and top with lime, cheese, salsa and any other taco topping you love.
