Supporting document 2 Animals and Products Covered under Existing Australian Standards Proposal P1014 Primary Production & Processing Standard for Minor Meat Species & Wild Game

Executive summary

This Proposal will cover the remaining species not covered under Proposal P1005, including:  the remaining species under AS4696-2007 Hygienic Production and Transportation of Meat and Meat Products for Human Consumption (buffalo, antelope, camels, alpacas, llamas, deer, horses, donkeys)  the species covered under AS 4466 - 1998 Hygienic Production of Rabbit Meat for Human Consumption  AS 4467-1998 Hygienic Production of Crocodile Meat for Human Consumption  AS5010 – 2001 Hygienic Production of Ratite Meat for Human Consumption (ostrich/emu)  AS 4464-2007 Hygienic Production of Wild Game Meat for Human Consumption.

The animals and products covered under the existing Australian Standards are summarised below.

Australian Standard Animal/commodities

Hygienic production and meat and meat products for human consumption that are transportation of meat and meat derived from animals of the bovine (cattle), bubaline (buffalo), products for human consumption camelidae (camel), caprine (goats),cervidae (deer), ovine (AS4696-2007) (sheep), porcine (pig) and soliped (horse) species slaughtered other than in a wild state.

Hygienic production of wild game Wild game animal means any vertebrate animal: meat for human consumption (a) including a mammal, bird or reptile, but excluding fish; and (AS4464-2007) (b) of a species that can be legally harvested; and (c) not husbanded in the manner of a farmed animal; and (d) is killed in the field. Wild game meat means the edible part of any wild game animal that has been dressed or prepared in a wild game meat processing premises and passed by a meat safety inspector as fit for human consumption. Wild game meat products means a product containing wild game meat.

Hygienic production of rabbit meat Meat means the edible part of any rabbit and edible offal for human consumption (AS4466- Meat product means a product intended for human 1998) consumption containing meat..

Hygienic production of crocodile Crocodile meat means the edible part of any slaughtered meat for human consumption crocodile excluding offal. (AS4467-1998)

Hygienic production of ratite meat Emu meat means the skeletal muscle of an emu (with or for human consumption (AS5010- without accompanying fat) together with the sinew, nerve and 2001) blood vessels that ordinarily accompany the muscle tissue and that are not normally separated from it in the process of preparation for sale. Hygienic rendering of animal All rendering premises operating in Australia and to all products products (AS5008-2007) of rendering operations including, but not restricted to meat meal, meat and bone meal, bone meal, poultry meal, poultry by-product meal, feather meal, fish meal, blood meal, tallow, poultry oil, fish oil.
