This position is temporary, intermittent – meaning it is a call as needed position with no set schedule. The incumbent is limited to no more than 1,039 hours in this temporary position. Tour of duty includes weekends and holidays.

THE POSITION

INTRODUCTORY STATEMENT

This position is established on a Forest Service Job Corps Civilian Conservation Center to cook/prepare a wide variety of food served both cold or hot, handle and store food in a clean and sanitary environment, and control the stock levels of food and supplies. May cook for groups of varying sizes.

Assists students and subordinates in understanding the relevance of appropriate social and employability skills to workplace success. Promotes standards of conduct which are expected and accepted in the workplace. Participates in the Behavioral Management System as necessary to ensure proper workplace appearance and behavior.

The incumbent of this position reports directly to the Cook Supervisor. This position requires excellent verbal, written, time-management, mediation, organization, and computer skills to meet the Cass Job Corps Mission and to succeed in the position.

This positions is subject to applicant and random drug testing in accordance with USDA regulations.

KEY REQUIREMENTS

 Must be a U.S. Citizen to apply.  Males born after 12/31/59 must be registered with the Selective Service.  Subject to a negative drug test prior to entrance on duty.

Major Duties and Responsibilities of the Position:

 Instructs, directs, and coordinates with student cooks and KPs in the proper handling and storage of food, proper cooking techniques, recipes, preparation, usages of equipment, cleaning, etc.

 Performs a wide variety of food processing and cooking tasks to prepare regular and diet entrees. Menus require complex techniques and/or multiple processing or preparation steps. Roasts, broils, bakes, fried, steams, and stew meats, fish, and poultry and prepares specialty sauces. Prepares fresh fruits and vegetables for cooking and salad bar, prepares meat platters, salads, and hors d’oeuvres. Prepares soups, stocks, broths, gravies, sauces, and pudding from scratch, without the use of packages mixes.

 Slices, grinds, and cuts food items to specific size requirements or weight specifications. Cooks food in large quantities, adjusting standardized recipes for the number of servings required. Adjusts food needs and recipes as needed and adjusts/changes processes or recipes to improve taste and consistency

 Plans the cooking process to schedule and coordinate the preparation of food items and/or complete meals. Heats and serves convenience foods using staggered cooking techniques. Adapts preparation methods in relation to available equipment.

 Loads, serves, and replenishes hot tables. Maintain proper food holding temperatures, during holding, transport, reheating, and serving to meet quality assurance and safety standards. Distributes food to serving area according to schedule. Properly presents cold foods. Carves and uses colorful fruits and vegetables as garnishes.

 Performs yield testing of food items to determine serving weight or volume after preparation, and gathers other date to assist in making purchasing and menu pricing decisions.

 Operates a wide variety of equipment, including specialized equipment such as cook tanks, agitating kettle, pump fill station, tipper tie, blast chiller, and vacuum packer.

 Ensures proper food handling and sanitation requirements and directions are followed relating to all areas of food preparation and storage requirements. Instructs student cooks and KPs in the proper handling and storage of food.

 Ensures proper receipt of subsistence deliveries and proper checking for quality, freshness, proper state (i.e., frozen, cold, dry, etc.), quantity, and adherence to Federal, USDA FS, or Qualified Products List specifications. Ensures all deliveries of food are dated before storing.

 Ensures proper storage of all foods according to USDA FS policies, rotating stock on a first in/first out basis to prevent spoilage and to ensure use of foods prior to expiration dates. Assists with monthly physical inventories and ensures a perpetual inventory of all unposted subsistence is maintained.

 Ensures established procedures to maintain security of storage area are followed.

 Calculates number of servings of each food item needed daily, adjusting recipes and ingredients to use food items from the inventory and stock on hand. Ensures distribution of all pre-weighed and/or pre-measured food items, pre-portioned condiments, and garnishes. Ensures stock levels of supplies are maintained in designated areas.

ABOUT THE CENTER

Cass Civilian Conservation Center is funded by the Department of Labor and operated by the Department of Agriculture, Forest Service. It is located in Ozark, Arkansas, approximately 17 miles north of Ozark, Arkansas. Cass is a residential program that provides academic, career technical, and social skills training for an average of 184 young adults, ranging in ages from 16-24. Cass is a co-ed Job Corps and staffed 24/7. Students reside in the dormitories during non-training hours.

 No childcare is available at the center.  The opportunity for government housing on or near the center is dependent on vacancies.

ABOUT OZARK, AR

Ozark is located in the Ozark-St. Francis National Forest on Scenic Byway 23. Ozark is a small community in which provides access to shopping, churches, schools, and medical services. The primary cultural centers of the area are Fort Smith, AR, about 40 minutes from Ozark on Interstate I-40 west and the Fayetteville/Rogers/Springdale area located about an hour from Ozark.

Fort Smith and the Fayetteville/Rogers/Springdale area offers of variety of social, commercial, medical, educational, and cultural opportunities. The closest airport providing linkage to the rest of country is also located in Fort Smith. Fort Smith and Fayetteville are within commuting distance for the employees who choose to live in these city.

Ozark has one elementary school, one middle school and one high school. There is also one private school, Ozark Christian School. The Franklin County Learning Center in Ozark provides services to handicapped students. Arkansas Tech University - Ozark, University of Arkansas Fort Smith and Arkansas Tech University in Russellville 50 miles east on Interstate I-40, offers opportunities to those individuals wanting to continue a post-high school education activities.

Mercy Hospital-Turner Memorial, administered by St. Edward’s Mercy Hospital in Fort Smith, is the closest emergency care provider located in Ozark. Continuing care patients are transferred to Fort Smith when necessary. Dentists, Chiropractors, Internists, General Practitioners, Podiatrist, and Surgeons have offices in Ozark. Most other specialists are available in Fort Smith. The Western Arkansas Guidance and Counseling Center maintains offices in Ozark with psychologists and psychiatrist on staff.

Ozark has several apartment complexes with units renting from approximately $350-$400 per month, water provided. These units are usually hard to find so keep that in mind. Sales prices of existing 3 bedroom 1-1 ½ bath homes range in price from a low of $35,000 to $60,000. There are a limited number of staff housing units available on center; availability can be ascertained through the Center Property Manager.

There is one local newspaper, The Spectator, which is published weekly. Both Fort Smith and Little Rock newspapers are available, you can obtain a copy of The Spectator at 207 W. Main St., Ozark, AR. 72949 or click here to visit their website.

Jefferson Lines and Greyhound Bus Services are available Monday through Sunday out of Fort Smith, AR. The Ozark Airport provides access to the area by sky with a 3,300-foot asphalt runway. Commercial airline service is available at the Fort Smith Municipal Airport, 41 miles west of Ozark.

In addition, Cass Civilian Conservation Center has a chaplaincy program and services are held Sundays and Wednesdays at the Cass Chapel.
