DUTIES AND RESPONSIBILITIES:

 Work with The Executive Chef to produce diversified menus in accordance with the hotels policy and vision.  Come up with new dishes which appeal to guest wherever required.  Establish the working schedule and organize the works in the kitchen so that everything works like a well oil machinery.  Produce the high quality dishes that follow-up the established menu and level up to location standards as well as to guest requirements.  Plan the food design in order to create a perfect matched between dish aspect and its taste.  Discover talented chefs and train them in order to reach the high standards of the food taste.  Train the auxiliary kitchen staff in order to provide best result in minimum time and using the maximum available resources.  Maintain order and discipline in the kitchen during working hours.  Create tasting menus for guest or clients interested in contracting the food for different events.  Developing a cross- marketing strategy in order to increase profit.  Keeping all working areas and surfaces clean and tidy.  Ensuring that all foods are produced in a safe and hygienic manner at all times  Making sure meals are prepared and presented on time.  Responsible for completing all audit and quality standards documentation.  Cooking fresh food in a high volume environment.  Assisting with some administration duties and management of the catering staff.  Deputizing when the Chef Manager is absent.  Involved in catering for large conferences and banquets.  Monitoring employee productivity & kitchen related costs to ensure efficiency.  Dealing with any employee issues and queries.  Making sure stock control and rotation procedures are implemented.  Assisting with the training, management and development of catering staff.

Capacity of 250- 300. I m handling the main kitchen were we serve all day dine in and 24 hours room service and bouquet function.

 Worked at al nawras hotel appt. as a chef de partie from 21st of June 2010 to August 12, 2012 Dubai UAE. A four star deluxe hotel apartment 350 rooms, 2 restaurant, 2 bouquet. Im handling the main kitchen second in-charge.

 Worked with Dubai Marine Beach Resort & Spa, Dubai, U.A.E. as demi chef de- party since August 2007. It is 5*property with 15 f&b outlet and 3 banquet hall the capacity of 350, 500, 1500.
