Food Science Syllabus-RETURN signed by ______-worth 5 points Course Rational: To improve the health and quality of life of Missouri citizens, performance competencies for this course enable students to: A) construct meaning related to the biochemistry of foods and nutrition; B) solve problems related to foods and nutrition through the application of scientific principles; and, C) assess the impact of food safety and sanitation on the health and well-being of individuals and families.

Textbook: Food Science

Class Topics:  Orientation to food science  Sensory evaluation of food  Food safety and sanitation  Science foundations  Biochemistry of foods and the major nutrient groups  Chemistry of food formulations and reactions  Food manufacturing processes

Performance Assessment:  Based on classroom participation, homework, bell work, in-class work, projects, cooking labs, quizzes, binder check and test grades. The final grade will be based on the average of quarter grades and semester final.

Supply List:  Text book, Three-ring binder (2”-3”), dividers (this must be for this class only)  Paper, Writing utensil (bring these to class everyday)

Procedures: 1. When teacher plays music to signal for students attention, students need to end their task or conclude their conversation, and face the teacher for further instructions 2. Turn assignments into class box on teacher’s desk 3. Keep all work in your binder. It should be organized according to grade sheet. 4. Bell work begins the class and should be kept in your binder. If you have an unexcused tardy and it’s already down you will not be able to make it up. If you are absent you are responsible for asking a classmate or the teacher for the makeup. 5. If you need to leave the room, at an appropriate time ask the teacher to sign your planner and take it with you. 6. Homework will be accepted late for a reduction in credit according to the following scale. 1st class day -15%, 2nd class day -30%, 3rd class day -45% and so on
