Write up a summary, including how flavor was developed in the new dish. If you prefer, go to Eating Well’s website, click on “Healthy Cooking,” and then “Recipe Makeovers.” Follow the same steps.

Read the menu items and their descriptions. Select a balanced meal that includes an appetizer, entrée, side dish, and dessert. Using the nutrition information provided, add up the total number of kcalories, fat, saturated fat, and sodium in your meal. Compare to the nutrient profile of a balanced meal at the beginning of this chapter.
