May is love your lentils month! Lentils are legumes and are related to the bean. They are high in fiber for digestion, protein for muscle building, potassium for brain and nerve function and folate for prevention of birth defects. They also have a low glycemic index, which is good for people with diabetes. Try Lentil Taco Lettuce Wraps for a Tasty and Healthy treat. You will need 1 Cup of dry lentils, ½ large onion, ¼ Cup shredded carrots, 1 whole bell pepper sliced into long strips, 1 can diced tomatoes, 2 cups veggie/chicken stock, 1packet taco seasoning and lettuce leaves. Sauté onions, peppers and carrots until softened, add lentils, diced tomatoes and stock. Bring to simmer, cover and cook for 40min. or until lentils are tender and most of the liquid is absorbed. Fill lettuce leaves as you would for a soft taco shell. You can top with fat free sour cream, shredded cheese, hot peppers or any of your favorite toppings. Roll and enjoy!
