Conclusion: According to the results, high levels of phenolic compounds contributed to the biological, physicochemical, and rheological properties of probiotic yogurt, as well as its sensory scores. However, Iran also deserves to be known and celebrated for its rich and varied traditional cuisine. In the past, traditionally prepared items that featured raw milk and bone broth were commonplace in the animal-fat-rich Iranian diet. These included Lighvan, a semihard cheese made from raw sheep’s milk (or a combination of raw sheep’s and goat’s milk), and Ab-goosht, a peas- ant stew that translates literally as “meat water” because it relies on the core ingredients of lamb shanks and neck bones to create a broth abundant in minerals, gelatin and collagen. Nowadays, unfortunately, the Iranian diet is much more likely to highlight cheap (in the short term) food industry standards such as vegetable oils, margarine, soy and sodas. Iran also has succumbed to Western fears about animal fats. Based on routine cultural characteristic, general morphological and biochemical assay, 77 out of 168 bacterial isolates were identified as LAB. These isolates were examined for the presence of inhibitory activity against other randomly selected LAB isolates. Thirty-three strains showed antagonistic activity against the closely related LAB strains and were further challenged against other gram-positive and gram-negative pathogens including Listeria monocytogenes, Staphylococcus aureus and Salmonella entritidis.

Accepted 2 December, 2010 A varied climate in Iran makes the production of a wide range of dairy products possible. The aim of this study was to isolate and identify new potential probiotic lactobacilli from traditional Iran dairy products. The isolates were screened for their probiotic potential activities, including acid and bile resistance, antagonistic activity and cholesterol removal. Screening of acid and bile tolerant strains from 14 different samples led to the identification of 20 isolates of Lactobacillus spp. Most promising strains which assimilated more than 75% of the cholesterol in the medium and/or exhibited high inhibition value against pathogen identified based on 16S rDNA sequence. Lactobacillus plantarum, Lactobacillus brevis, Lactobacillus casei isolated from yogurt and cheese exhibited both high cholesterol assimilation and antagonist activity. These results suggested that, Iranian indigenous lactobacilli have potential as probiotics, and they might also be good candidates to be used as probiotic carrier or functional foods. In this samples, mean value for pH, acidity, fat, protein, salt, ash, moisture, calcium and phosphorus content was 4.00, 0.87, 2.01 ,10.95 , 0.57, 1.03 , 74.20, 0.61 and 0.15%, respectively.
