This is a premium product that was originally created for the Bennati family’s own collection of wines; at the same time, it breathes new life into their project to promote the Valtramigna region thanks to the name “Cerasum” (latin word for “cherry”) in honour of the ancient local cherry-growing tradition. We would like to point out that Cerasum does not represent a corporate CRU but a careful selection of each single step, from the selection in the vineyard until the choice of the best barriques Vineyard management: Manual In the cellar Vinification: The grapes are harvested some 20 days later than usual to allow for a greater concentration of the aromatic substances. After that, the clusters are put in small crates inside the so-called “fruttaio”, a large room dedicated to the wilting of the grapes, where they wither until February; the process is monitored daily, and it is done in a natural way, just by opening and closing the windows when necessary. Then, the grapes are de-stemmed, pressed, and put in temperature controlled tanks together with the must where they macerate for more than twenty days. Filtration: Partial, to allow for a more complete expression of the wine’s sensory profile. Any natural sediments in the wine are a further proof of its genuineness. AT THE TABLE Tasting notes: Deep red wine with garnet nuances; on the nose, intense scents of ripe fruit and jam, delicate floral notes (pansy), tertiary notes (tobacco, cacao, cinnamon). Very elegant on the palate thanks to the balance between structure and softness. Complex finish, with clear notes of alcohol soaked fruit (cherries, blackberries, raspberries) and intense balmy scents. 0,75 L Food pairings: it matches very well with tasty dishes, red meat and seasoned cheese; it goes very well with dark chocolate too. Furthermore, Cerasum is also good as a meditative wine. Package Every bottle is manually labelled, sealed with wax, and put into a wooden gift box.
