PichiICHI-PICHI is one of the most traditional Filipino des- -Pichi serts which originated from the southern part of the PPhilippines. Here in America, making pichi-pichi is a lot easier be- cause ingredients are readily available at any Oriental stores. It is quick and easy to make, and can be served as a snack, and as a dessert at parties.

Ingredients: • 1 pound frozen grated cassava (thawed) • 1 1/2 cup water • 1 cup sugar • 1/2 teaspoon lye water

Methods: 1. Grease one 9-inch round aluminum foil baking pan. 2. Mix all ingredients in a bowl. 3. Pour into the pan and steam until cassava is cooked (firm and transparent). 4. Remove the pan from the steamer and let cool. 5. Make small patties-like portions (approximately 1 1/2” x 1 1/2”) and roll in grated coconut.
