The Sweet man establishment of Bhagat Halwai isn’t as old as the taj mahal, but close enough. Started by lekh Raj Bhagat in the Belenganj area of the city over 260 year ago, the traditions of fine service have held true though much else has charged with time-mud plastered floors where people en spoons and mud utensils being substituted with modern cutlery, Chinese and south Indian cuisine adding to the staple diet of poori-sabzi and cakes and pastries supplementing ladoos and barfis . You can almost imgine the day’s by when Raj kumar Bhagat, the ninth generation in the line of halwais, narrates how it all began. “’We have been here in since the Mughal era. No coal of fuel was used for cooking only caw dung and wood. Our specialties were poori sabzi (puffed bread and potato curry), bendai (stuffed puri) and sweets such as rabri, jalebi and barfi”,says Raj. Over the years, the family has expanded its business and now runs four shops across the city though suprosongly they have refrained from serving Agra’s Popular sweet, the petha because it is not their area of specialization.
