It was in June 1965 that three friends – Helen and Roger Meadmore, and Allen Trachsel – opened a little café in Adelaide called The Pancake Kitchen. The menu was limited, but mouth-watering pancakes had finally arrived in Australia. The 4 Market Lane restaurant was a huge success from Day One. The t-shirted and friendly staff reflected the relaxed attitudes of the time. That is why people happily queued to get in to sample the atmosphere and the delectable pancakes, whether topped with strawberries or spicy beef. Later, Roger headed north to Sydney, where he opened Pancakes on the Rocks.

Over the ensuring decades, restaurants opened seemingly everywhere as the demand for Helen and Allen’s pancakes spread into the countryside (Frankston, , Lorne) and Roger’s as far north as Coolangatta and Brisbane. However, the most dramatic change came with the opening of super-sized shopping centres in suburban areas. When multiplex cinemas were progressively added, The Pancake Parlour decided to open its new restaurants next to them in the shopping malls. People no longer had to drive for 30 minutes or more to the city to get a pancake. This strategy still thrives today, for what more could you want before or after a movie than a pancake and a great drink (the list now including wine and cocktails). With Allen’s sad passing in 2004, and the retirements of Roger and Helen, The Pancake Parlour is now managed by Helen and Roger’s son, Simon.

Now, 50 years later, the Melbourne icon has 10 Melbourne locations, with two new restaurants due to open in July 2015.

The Pancake Parlour’s CEO, Simon Meadmore, is leading The Pancake Parlour in exciting new directions, with expanded menus and a modern style of architecture and design. “In recent years we have undergone a major re-design with a bold new vision and look,” Mr Meadmore said, “but we still honour the unique and loveable elements of our past. The re-design includes everything from graphic design and restaurant architecture to a subtle culinary revolution.”

In fact, Mr Meadmore believes the evolution of The Pancake Parlour has only just begun. “We stay relevant because we move with the times. We are constantly creating new dishes, with a strong social-media presence and a passionate commitment to technology.” Meadmore is continuing his re-invigoration of The Pancake Parlour with showcase new restaurants and cocktail bars, while continuing to treasure all that has made The Pancake Parlour a Melbourne institution for five decades. “The one thing that never changes is our unyielding devotion to the pancakes on which we have made our name over the past 50 years.”

Great Radio Pranks - Wayne Mac (author of ‘Don’t Touch That Dial’)

Wayne Mac confesses that he was involved in a carting prank upon2CC breakfast host Kim Mothershaw in 1986 when he was PD. He says: “The ex-Mrs Mac and I were at a station BBQ on a Sunday afternoon. Kim, as was his way, was revving her up about something or other. Nothing offensive, just jokey/blokey remarks. Might been about her weight as she was heavily pregnant with our first child. On the way she suggested ways she’d like to ‘get back at him’. I replied, “We could rig one of his carts for the next day’s show”.

We dropped by the station on Sunday evening and she recorded this brief piece along the lines of:“Well hi there Mr Mothershaw, Mrs Mac here to remind you that your remarks about (such and such) were totally lame and I thought I’d share this with your audience. Wish I was there to see the look on your face right now. Have a good day matey.”

I chose a spot which was always played first in the break after the song out of the 7am news. Some adjacency thing from memory. Simply re-carted the spot with Mrs Mac’s grab all self contained. Brought it to the boil then left it to simmer overnight.

I realise I wasn’t setting a great leadership example for the team, but bugger it. Didn’t like to take myself too seriously and Kim’s a REAL good egg. I knew he’d see the funny side of it. If it’d been Kim’s predecessor – a man who often laughed on air but lacked a sense of humour in person – then I wouldn’t have gone there.

So it was all in fun and as I recall having FUN was the main attraction of being in radio. BTW, the first child mentioned in paragraph 1 is now a clinical psychologist.

6 Jocks’ Journal published by Newmedia. www.newmedia.com.au Professor discusses the evolution of public speaking and the “ideal” radio voice

Dr. Brent Malin, a communication professor at the University of , recently lectured in Carswell’s Annenberg on the evolution of public speaking. Entitled “Electrifying Voices: Technology and Public Speaking in the Early 20th Century U.S.,” the presentation was the latest installment of the communication department’s “Great Teachers” lecture series.

Today, the concept of ‘public speaking’ is well known, but the term did not even exist before the early 20th century. Before the 1920s, “elocution” was the predominant form of public speaking. Largely forgotten today, elocution favored a “plaintiff style,” full of emotion and hand gestures.

Malin even presented an elocution manual, complete with drawings of various hand movements used to engage audiences. The elocutionary style gradually became antiquated, though, replaced by a more conversational, practical style known as “American cool.”

What caused this shift? Malin argues that various innovations changed the way people understand public speaking, telling his audience that “technologies change speech.” First, Carl Seashore of the University of Iowa revolutionized “phonophotography,” a method of visually recording sound through the use of a magnetophonograph. In any speech, some sounds lie beneath, unheard to the audience. These subtle sounds are important, Malin said, because people actually do hear them and subconsciously prefer some pitches to others. By capturing these underlying sounds on paper, magnetophonographs purported to “know the perfect pitch.”

Next, in the 1920s, public radio rose to popularity. As Americans tuned into public radio more frequently, radio announcers became increasingly sought-after, and some even rose to fame. The search for the perfect radio announcer began.

Based on the developments of the magnetophonograph, researchers formed a vision of the ideal announcer: a male with a voice “of the low middle range,” who spoke 175 words per minute “with marked pitch variations” – among other qualities. Based on their criteria, Malin said that researchers were able to “figure out what people want before they wanted it.” Some voices actually sound scientifically better than others to the human ear.

Early conclusions from phonophotography suggested that “women have too much personality” in their voices to be fit for radio.

Pronunciation also gained importance. The “Pronunciphone,” a program akin to Rosetta Stone, instructed listeners to repeat aloud as a male voice read a list of commonly mispronounced words. In job interviews for positions, employers instructed applicants to read verbose passages replete with “tongue twisters” and hard-to-pronounce names.

So, who would be a perfect radio announcer? According to researchers, Benito Mussolini. His voice offered a perfect blend of “cheerfulness” and “optimism.”

Malin’s assertions were well-received by professors and students alike, provoking a thoughtful question-and-answer session about the iPhone’s “Siri” and what it means to talk “correctly.”

Still, the lecture admittedly verged on the esoteric.

“It was a little over my head,” said senior Berchtold. Senior Kelsey Veno agreed that the topic was a bit complex, but added, “I was interested in the idea of the ideal male voice and how it has really been constructed in the media.” Senior Abriana Kimbrough was similarly interested in the importance of gender and race in public speaking. “We’ve been reading Malin’s books in class, so to hear him clarify himself was great,” Kimbrough said. “People were expected to talk like a white male, and media is dominated by white male voices.”

While Malin’s thesis is largely specific to the early 20th century, his overarching concern is universal. Asking his audience to ponder the effects of Youtube, for example, on human behavior, Malin concluded, “Technology is deeply embedded in our everyday lives.”

Kinderling Kids, a national kids radio station launched on June 2 in a joint venture with . Founded by former General Manager of FBi Radio, Evan Kaldor, and a team of radio and music professionals, is the first of its kind in Australia.

We are creating shared moments for the music lover in the child, and the child in the music lover. Kinderling Kids Radio is a parent’s companion to their day with kids.
