Jade’s Chef de Cuisine Leong Chee Yeng has crafted a medley of gourmet plates for his 2017 reunion menus. The signature Eight Happiness Gold Rush Yu Sheng is served on a platter decorated with calligraphic drawings of roosters and auspicious greetings to accompany fresh slices of Salmon, house-made Champagne Jelly, and drizzles of Olive Oil and Honey Pineapple Dressing.

Delicately stuffed and hand-folded to imitate a rooster’s crown, Poached Cockscomb-shaped Chicken Dumplings showcases the culinary team’s dexterity and creative plating technique. In Stewed Chicken and Crab Meat Duo with Red Wine and Chinese Wine in Claypot, Chef Leong stages his rendition of Surf and Turf in a safari of flavours.

Like a modern day Marco Polo, The Lighthouse Restaurant’s Chef de Cuisine Carlo Marengoni stirs the nest with a dressing of Chinese flavours added to his Lunar New Year menu. Traditional pork ragout takes an Asian spin in Tagliolini, Pork and Prawn Ragout with Soya Sauce while chicken breast takes a spicy auspicious twist in Almond-crusted Chicken Breast with Spinach and Black Vinegar Chilli Sauce with almonds frequently used in Chinese cuisine to symbolise good luck.

Heritage cuisine at The Clifford Pier is re-interpreted for The Lunar New Year and anchored on the offering of Mandarin oranges to relatives and friends. In Chicken Bak Kwa Salad with Golden Crisps, Dried Persimmon and Segments, barbecued coins of chicken are juxtaposed against the flavour of Mandarin oranges to usher luck and prosperity. Prawns that represent “Happiness” are dipped in sweet kumquat in Crispy Prawns with Kumquat Glaze, while house-baked Lunar New Year Cookies are complemented with Mandarin Orange Sorbet for an auspicious sweet ending.

La Brasserie’s bistro fare dons festive ingredients for the new Rooster Year.
