MEH-LAWN: Melon de Bourgogne, the triumphant of Muscadet in the Loire’s western reaches, has often been called the quintessential oyster . Normally minerally, racy, even briny, Melon can be difficult to make naturally as it often requires a heavy hand of sulfur to stop (which softens a wine’s acidity). But not these guys. They’re working with low sulfur additions or allowing their wines to go through malolactic fermentation, pushing Muscadet into a new territory of richness, texture, and fringe popularity.

ORANGE WINE? The bottles below might be the closest representation of how wine was made over 5,000 years ago in the Republic of Georgia…what some may consider the ‘first’ wine ever produced. White are left to ferment on their skins in barrels, steel vessels, or amphorae, lending all shades of color from golden yellow to burnt amber, as well as tannin, texture, and loads of complexity. Aromatics and flavors run the spectrum of toasted nuts, beeswax, mottled fruits, and farmhouse cider. They are a little wink at history and tremendous food wines.

DOMINIO del UROGALLO/NICOLÁS MARCO: Take a dreamer from Toro, Spain. Add one of Spain’s oldest wine-making regions, known not for wine, but for cider. Toss in super-steep slate- quartz soils nestled in a cool climate. Mix with craggy old vines upwards of 130-years-old. Say that dreamer wanted to keep his old vines as healthy as possible so he farmed biodynamically and vinifieed each of his 14 parcels separately. If you did all that, you’d end up here, with Nicolás Marco’s tremendous wines. Incredibly pure expressions of northwestern Spain, pulsing with juicy, spicy red fruits, fine tannins and loads of minerality. These are truly special wines.
