After all, this combination has been boring dieters and 1/4 teaspoon pepper disappointing palates for decades. Let’s see if we can’t come up 4 boneless, skinless chicken breasts (about 4 ounces each), all visible fat discarded, with a way to make this mix a little more interesting. Step one, flattened to 1/4-inch thickness add the breading, parsley and oregano called for in the recipe. Preheat the oven to 400 F. Lightly spray a 13-by-9-by-2-inch baking dish with cooking spray. This versatile grape can produce a wide range of Ham and Broccoli frittata wines, depending on where the grapes are grown and how the juice is handled in the winery. Sauvignon Blanc wines can be produced with or without the use of oak or other wood inputs. Those fermented and/or aged in oak barrels will show more rich- ness and body than wines which have not had any exposure to wood, and Sauvignon Blanc which has been vinified in stainless steel or concrete tanks will typically exhibit more fresh crispness, bright acidity and expressive fruit. Though chicken breast can sometimes turn out dry due to its natural lack of fat, this month’s preparation should thwart much of that risk through the coating and the cheese, and the acidity and fruitiness in the wine will help to overcome that propensity. The versatility of Sauvignon Blanc can also combine nicely with many different variations of this recipe. Skip the bread coating and bake the chicken in cream of mushroom soup, no problem. Add some diced tomatoes and green chilies, that’ll work. The wine can easily hold up to some spice, some umami, some saltiness. Let your imagination go wild, and most importantly, pick up a couple of bottles from different local pro- ducers and do a comparative tasting. One style, one site, one price point might go perfectly with this version of Baked Parmesan Chicken and the other bottle might just inspire your next version of this healthy dish. Cheers! No appointment is needed for the drive-thru being held from 10 a.m. until 2 p.m. behind Cotati City Hall at 216 East School St., police said. Residents are asked to remove their medication from the bottle and place them in a bag prior to arriving at the event. The DEA accepts tablets, capsules, patches and other solid forms of prescription drugs; syringes and illegal drugs are not accepted. “Proper disposal of prescription drugs makes your home a safer place and it also benefits our environment,” Cotati PD said. “Throwing medications away in the garbage may be dangerous and lead to tragic accidents, as they can end up in the mouths of children or household pets. Many people also toss expired or unused medications in the trash or flush them down the toilet or drain. Some components of these drugs end up in our lakes, streams, and water supplies.”

Gardening principles By Irene Hilsendager Now that the garden bed is pitched over and soil amendments added, if Mother Nature would like to hold the temperature above frost and let Mr. Sunshine, most gardeners will hit the garden patch this coming week. But in the meantime, if you still have the chore of getting a lawn in shape, now would be the pe- riod to get the outdoor space more eco-friendly and easier to deal with. Have you ever thought of minimizing the lawn? Grass often needs more fertilizer, herbicides, pes- ticides and water than other types of landscaping. Reducing a lawn’s size to what you actively use will make a huge impact. Start small and remove a section of turf grass and plant native grasses, trees or shrubs. If you are going matrix planting, use native plants and low-growing ground cover tightly together to hold in moisture and crowd out weeds. Choose plants that bloom at different times and you will have beauty from spring through fall. Wildlife and pollinators such as bees, butter- flies and other creatures that transfer pollen from flower to another with a continuous source of food will also thank you. Choose perennials (less work as annuals must be replanted every year). Perennials can grow for decades. They are less work every spring and more sustainable, since their root systems can make them more drought resistant and help build up the soil. Choose native plants as they grow naturally in this region and are well adapted to living in Sonoma County and shouldn’t require lots of fertilizer, pesticides and water. You can also replace part of your lawn with ornamental or sedge grasses. Ornamentals are usually tall and add structure and airiness to landscaped beds while sedge mimics the green of a lawn. Both tend to need less fertilizer and water than standard turf and you only have to mow them once a year University Elementary “Garden Planting Day” if at all. This week in Rohnert Park sports By Paul Matli Sports are officially back in Rohnert Park. All three high schools, Rancho Cotate, Technology and Credo High Schools are in action. Due to Covid and the condensed school year there are way more sports happening than normal this time of year. Football season wrapped up this Friday, while basketball season is right around the corner. Having sports back gives the athletes an opportunity to get out of the house and enjoy being competitive again. For some teams it’s about winning and competing, while for others it’s just being grateful for being able to play. Here’s what happened this week in RP Sports: Rancho Cotate Football: The Cougars wrapped up their season with a 34-0 win against King City High School Friday night to finish the season 2-3. The Cougars’ record wasn’t what they had hoped for, but this was a season that allowed them to develop young talent and come back stronger in the fall. It was good to see the seniors, who have done so much for the program, go out on a high note by winning their last game, even if it was an away game. Rancho Cotate Baseball: After splitting a home and away series with the Windsor Jaguars, the team sits at 4-1 on the season. The Cougars look to continue their good start to the season with a Tuesday, Thursday clash against rival Cardinal Newman High School. The Cardinals are 4-0 on the season, so this is shaping up to be an early season showdown between two good North Bay League Teams. The boys also play Saturday, April 24, at 1 p.m. against Petaluma High. It’s a busy week for the Cougars baseball team. Rancho Cotate Men’s Lacrosse: The Lacrosse season is just about to get underway. The Cougars started off their season with a non- league game against Vintage High School on Monday and then will get right into NBL action with a back-to-back against Windsor and Cardinal Newman High School on Friday and Saturday. Rancho Cotate Women’s Lacrosse: Like most of the spring sports team, the ladies got just a couple of games in 2019 before the year and a half shutdown. They got back to action after a long layoff with a Monday night affair against Justin Siena of Napa. The Cougars’ busy schedule consisted of games against Elsie Allen, Sir Francis Tracy Si Drake High School and Ukiah High School. The games were played on Tuesday, Wednesday and Thurs- day respectively. Rancho Cotate Women’s Softball: The ladies are 1-1 on the season entering a two-game series against Cardinal Newman. The Cougars defeated the Vikings of Montgomery 9-3 in the opener and then lost 7-5 two days later. The Cougars and Cardinals enter Tuesday’s game with 1-1 records, so again the heated rivalry should be a good one for those who are able to attend. Technology High School Baseball: The boys are 1-1 on the young season after splitting with Upper Lake High School. The Titans won the opening match 12-9, only to lose two days later 11-7. The Titans had another home game Tuesday against Laytonville and will then have a week off before they play Sonoma Academy. The game against Laytonville starts at 4 p.m. Credo Baseball: The Gryphon are 4-3 on the season and 2-0 in the North Central II Conference. They have wins against Clear Lake, Tomales, Upper Lake and Middletown while losing to Cloverdale and Healdsburg. The team’s next game is a non-league game Friday, April 23 against St Vincent High School.
