Regardless, my favorite San Marzano I or II tomato sauce has Teschchin Yazyk you peel the tomatoes, then run them through a food mill to remove the seeds (this is the ONLY time I bother), then puree and pour into a glass 9X13 oven proof dish and place in oven at 200 deg. Slowly allow to cook/caramelize for about 3 hours, stirring every 1/2 hour or so, and once enough liquid has evaporated, you are done. Some call this "gravy." From there you can add herbs, onions and garlic as you prefer. Amazing!
