Hophead 3.8% An extremely clean drinking pale golden ale with a strong floral aroma and elderflower notes from the Cascade hops. This beer is full bodied and full flavoured yet gentle enough to make it a favourite session beer. American (APA) 4.7% Brewed with American West Coast style yeast along with Cascade, Centennial and Chinook hops. The low coloured Concerto malt provides a perfect light colour and dryness to compliment the crisp taste and full aroma of the hops. SERIOUSLY FULL OF HOPS. Revelation 5.7% A blend of Columbus, Chinook, Cascade, Crystal and Warrior aroma hops by the sack full - then dry hopped during conditioning.

Partridge Best 4.0% A Best Bitter brewed in a traditional Sussex style using extra pale Concerto, Crystal and Chocolate malts with East Kent Goldings hops. Typical of Dark Star ales, the Best Bitter relies on the heavy handed addition of aromatic hops late in the boil. Festival 5.0% A chestnut bronze-coloured bitter with a smooth mouth feel and freshness; a classic style strong bitter brewed as a Dark Star version of Festive, a former great Sussex beer from King & Barnes. Dark Star Original 5.0% The brewery’s eponymous former Champion Beer of Britain. A dark, strong and bitter beer that defies classification. The beer boasts a complex malt flavour from the use of Crystal and Chocolate malts. Lager 4.2% Made with German lager malt, this low bitterness, clean and crisp lager is brewed using Polaris hops for bittering and Hallertau Mittelfruh hops for aroma. THE SEASONALS

Hophead Mosaic 3.8% (Jan – Feb) A new take on our classic Hophead using Mosaic Hops. The daughter of Simcoe, this hop imparts tropical and citrus notes and is a rising star in the American hop market. Art of Darkness 3.5% (Jan – Mar) A range of dark malts give classic roasted flavours with a hint of sweetness. Aroma hops are used to add the fruit and spicy flavours that make this a very drinkable ale American Brown 5.0% (Mar – Apr) A refreshing American . This crisp brown ale is brewed with a good dose of Simcoe dry hops to help provide a well-rounded finish to the beer.

DARK STAR BREWING CO TASTING NOTES Sunburst 4.8% (Apr-Sep) A hint of initial sweetness adds to the fruitiness and grapefruit tang of this summer ale without detracting from its clean flavour and rich hop aroma. Six Hop Ale 6.5% (May – Jun) A golden beer brewed with six different varieties of hops, added at six different stages of the brewing process. Not Into Yoga 4.5% (Jul – Aug) This naturally hazy, tropical pale ale is dry hopped with Chinook and Columbus hops and flavoured with pineapple and coconut pulp to give our take on Pina Colada. No umbrella needed. Tropical KO 6.2% (July/Aug - limited) Tropical KO, our homage to fruit punch, is a reinterpretation of all the things we love about big IPA’s. Think breakfast juice at 6.2% abv and start, or finish, your day off the right way. Hylder Blonde 4.2% (Jul – Sep) A delicate and lightly hopped beer with the fresh fruitiness of hand picked South Downs elderflowers, which are added after the boil to preserve their delicate aroma. Green Hopped IPA 6.5% (Sep - Oct) An already full-flavoured IPA is made even bigger by using fresh ‘green’ hops infused into the slowly conditioned beer. Designed for those who like their hops as an extreme sport! Bock 5.4% (Oct – Dec) Bock is a rich dark brown beer with a malty aroma and toasty caramel flavour. It is true to style with a delicate hop aroma and a well balanced bitterness. Crème Brulee 5.9% (Mar – Apr/Nov- Dec) A dessert in a glass. This beer is brewed using unfermentable lactose sugar, vanilla beans and plenty of roasted malts to provide a sweet, smooth caramel drinking experience. No blowtorch was used in the making of this beer Limited Availability Imperial 10.5% A vigorous fermentation is followed by a long maturation – the beer is brewed in February and then released on an unsuspecting public in December. A densely rich beer with a dark brown head, it has coffee and berry like aromas and a velvet mouth feel. This beer commands respect and deserves to be slowly savoured. Espresso 4.2% A black beer brewed with roasted barley malt and challenger hops. Freshly ground Arabica coffee beans, blended especially for Dark Star, are added to the copper for a few minutes after the boil to provide a rich and complementary coffee aroma.
