omething monumental happened in Beijing on November 12th, 1987, Ssomething that would change Chi- na forever: the Mainland’s first KFC opened. It was the largest KFC in the world at the time, and the first western restaurant chain to come to China. People lined up for blocks, with some reports saying that the line stretched in to Tiananmen Square. By the end of the first day, more than 2,200 buckets of the Colonel’s 11-herb- and-spice secret recipe were sold, and the store made a cool $80,000 USD ($173,000 today). Three decades later, there are now more than 5000 stores in 1,100 cities; the Chinese market is the largest for KFC and, almost exclusively through that brand, parent company Yum! makes about half of its annual revenue here.

My first trip to a KFC in China was not quite what I expected. I generally didn’t eat at KFC in my ancestral homeland of the Unit- ed States, and was surprised to find a more typical fast-food chain. You see, these days KFC (née “Kentucky Fried Chicken,” at one point audacious enough to claim that its chicken was “kitchen fresh”) is more known across the US as a horrific laborato- ry of the absurd, one whose mad scientists have unleashed culinary crimes against humanity. These crimes include, but are not limited to: the Double Down, a cheese and bacon sandwich that eschews bread for two fried chicken patties (which I actu- ally tried and had trouble breathing for a whole afternoon); the BBQ Bacon Boxmas- for those times when I wanted to just say sooner than I’d thought. I would’ve been upset, but as that last greasy bite slid down my gullet, I realized something. That combination of heaviness, ma- laise, confusion and disappointment that I felt was something I’d not felt in a long time. Not since that time I tried the Double Down. I put on a pair of elastic gym shorts and leaned back in satisfaction—not from my meal, but from the knowledge that the devil-may-care insanity of a home I left so many years ago had finally found its way back to me.

Sharp observers may remember the “Chizza” from several months ago (helpfully spelled out for customers as “chicken + pizza” in ad- vertising), but I was too horrified at the idea to even think about trying one. I had a similar reaction to the new “Chicken Taco,” but then my girlfriend expressed a desire to try it. Like every time I decide to eat at KFC, I said “Screw it” and prepared for a drive to the devil’s house with my beloved.

Before we go any further, we need to talk about what a “Chicken Taco” is. Its clear precursor is the Double Down Dog, in that it’s a folded slab of fried chicken (of that particular size and shape that only a fast food joint can achieve) filled with something else. In this case, it’s filled with corn, tomatoes, lettuce, guacamole and a spicy sauce. The picture even makes it look appetizing.

When I arrived at my local KFC, they were kind of confused at my order. Not one, but two Chicken Tacos? The cojones on this guy! the cashier’s face seemed to say. She yelled the order to the line, just to make sure this insanity was properly communicated to those preparing my meal. After several minutes, the two tacos were boxed and ready. Lastly, they slipped in a note, written in Chinese that basically said “eat this as fast as possible.” Whether that was because the guacamole wouldn’t keep, or a straight- up warning, was unclear. Back home with the missus, there was much anticipation as we unboxed our bounty. On top of all of this, the three are in charge of all maintenance, curriculum and even housing for some of the most desperate students. They aren’t alone however. Many of the best and brightest students band together to help the teachers when times are tough, even if all they have to do is show up to school. Most of the villagers think very highly of the three teachers, but others find them to be troublemakers and a nuisance. This colorful cast of characters really lends itself to the phrase “It takes a village to raise a child.”

There is romance, tragedy, comedy, triumph, and defeat. Liu Xin- glong paints three vivid portraits of men who only know dedica- tion and hard work. They’ve never had it easy. They don’t regret or blame others, just keep on keeping on. I wish I had teachers half as good as these three in my life. The three men are an inspi- ration, not just to others in the novel, but outside. Since reading it, whenever a problem at work arises, I always remind myself that I could be working in Jieling. I have gotten quite comfort- able in a big, modern city collecting five-figure checks, and the novel was a good reminder that I’ve got it quite easy here.

Jieling is a fictional place, but there are plenty of real places that this could occur in. That is what makes Liu’s writing so great. The novel is clearly drawn from real events and situations. Replace Jieling with any number of rural townships and there is sure to be some resemblance to Jieling. The Sky Dwellers is a love letter to the community, or minban, teachers and all that they must endure for the sake of education. The novel is also one of the more positive Chinese novels I’ve read in a while, so it was re- freshing to have a happy ending for once.

Like any novel, there are some problems. However, the ones in The Sky Dwellers are minor. Pacing can be a bit of an issue. A major conflict will get resolved after a few chapters, then there are lulls where not much of anything happens. This can be at- tributed to world building, but as someone who has done some travelling through rural China, it started to drag a bit at times. Some of the tragedies in the novel seem a bit contrived, like they were put in there for the sake of having tragedy. They do not tell the reader anything about the characters that we didn’t already know. Others came out of nowhere and killed some of the mood in certain sections.

All in all, I would highly recommend The Sky Dwellers for those who like inspirational, feel-good stories and for teachers. Even though that ragtag class you pulled out of your ass in five min- utes may seem like a total circus, just imagine that you could be doing all of that for 50RMB a month!

Seeing as we probably won’t be seeing a Deafheaven China tour any time soon, and though the comparison may be doing Harakiri for the Sky a bit of a disservice (they’re a pretty cool band in their own right), these guys will be perfect for a dose of something intense—and occasionally beautiful.

This prolific vocalist sings in both English and French, performing many jazz and pop standards such as “What a Wonderful World” and James Taylor’s “You’ve Got a Friend.” More on the Norah Jones end of the spectrum, Stacey Kent will bring the pleasant smooth jazz, if that’s what you’ve been after.

西仓This one kind of seems like a “duh” suggestion, but how much have you really ex- plored the Muslim District? Have you found the Great Mosque? 大华1935The biggest name in this trend of industrial culture sites, Da Hua 1935 used to be an enormous textile factory and now is a sprawling facility just sitting there, hoping that tourists will show up. There’s a lot dedicated to the history of the factory but there’s a lot of empty space perfect to wander around in. If you’d like a goal to work towards on your visit to Da Hua 1935, you might consider attending a concert there or trying out a nearby restaurant, or even making your way to the very back of the area to find an archery range.

36 xianease International Art Zone 半坡国际艺术区 Let’s start off in the east of the city with the Banpo Art District. It’s a bit of a haul on the subway, but once you’re off it’s just a short walk to this gauze-factory-turned- artsy-place. There are a few businesses around, such as cafés, offices for business in creative industries, photography and dance studios; what you’ll really be doing here is getting lost among the corridors of the old gauze factory, seeking out murals and statues and graffiti.

LaogangchangLaogangchang DesignDesign CreativeCreative IndustrialIndustrial ParkPark 老钢厂创意设计产业园 Hidden near the Xi’an Architecture and Technology University is a defunct steel mill that’s trying to find new life. Since it was acquired in 2002 by the Xijian University Science and Education Industry Group, development has been slow but steady, with the aim of developing an area like Beijing’s 798. It’s rather unknown even today, and though a few businesses and a bar or two have moved in, you’ll still have plenty of space to roam around and soak in all of Laogangchang’s industrial stylings.

There are a lot of potential adjectives one could use to describe Xi’an or Shaanxi: special, strange, different, astonishing, bizarre—the list goes on. Whichever one you’d choose, there’s no denying that this place is, if nothing else, very unique. The people of Shaanxi (specifically the Guanzhong Plain, a historical area that comprises much of modern day Shaanxi) would even agree with you if you called their homeland “bizarre,” because they are well aware of their reputation. There is no clearer indication of this than the Eight Oddities of Guanzhong, a list of eight features of this region’s culture that set them apart from any other people or cultures across China. 1. Giant Noodles This won’t come as much of a shock to anyone who’s found a street full of restau- rants to find that they’re only serving noodles, but the local obsession with large noodles is very well-known. There is some conjecture that the biang biang noodle, the most famous of all the Shaanxi noodle varieties, comes from an abundance of wheat in the Guanzhong area and a lack of some other things. Without meat and vegetables, one would need to eat a hell of a lot of noodle to get the proper energy to make it through the day, and our local noodles that more closely resemble belts really do the trick.

2. Giant Pancakes Speaking of oversized wheat-based foods, the third oddity of Guanzhong is the guokui (锅盔), a pancake the size of a manhole cover. It is said that guokui was the chosen ration of Tang Dynasty soldiers for its size, flavor and portability. You can still find this kind of pancake today in the Muslim District or in restaurants that serve Shaanxi cuisine.

38 xianease 3. Hot Peppers Our glutinous local specialties are great and all, but man cannot live on bread or noodle alone. The wise locals know this to be true, and have a solution: just put hot peppers on it. While is usually pegged as the “spicy” province, even they don’t have the audacity to just make a meal out of peppers and bread and nothing else. Sep- tember 24th will see the return of the Mid-Autumn Festival, a celebration of the fall harvest, which is one of the oldest traditions in Chinese culture. It has some unique traditions and a thrilling legend behind it, so without further ado, here’s what’s up with the Mid-Autumn Festival.

Their original recipe is the traditional one, white lotus seed paste with egg yolks, but more recently they’ve expanded their product line to “lava custard” mooncakes and “snowy” mooncakes (the latter of which is unfortu- nately only available in Hong Kong).

The Ma Brothers, from Shande in , come down to Xi’an every year for one month to sell their lovingly prepared mooncakes, the recipe for which has been passed down for generations. This ten-year-old tradition has become very famous in Xi’an, so be prepared to wait—but you won’t regret doing so.

河马-苏式月饼 Known as “Su-style” mooncakes, this specialty snack from southeast China throws out the egg yolks and fills each cake with fresh meat and crayfish. The result is a crispy, flaky pastry filled with flavorful meat and gravy. Locally, the best are made by Chef Xie Liang, who says that each of his mooncakes has three crayfishes’ worth of meat in them to ensure each bite is spicy, savory and delicious.
