Instant Rava Uttapam

Ingredients
Semolina/ Rava 2 cups Rice Flour 6-8 tbsp Curd/ Yogurt ½ cup. Finely chopped onion ½ cup Finely chopped tomatoes 1 cup Chopped Green chilis 1 Coriander 4-5 tbsp Salt 1 tbsp Red Chili powder 1 tbsp Oil to shallow fry uttapam Water 1 ½ cup
Instructions
Step 1: Make Rava/Semolina Uttapam batter
In a large bowl take 2 cups of Semolina or Rava. Add ½ cup of rice flour. Add ½ cup curd or yogurt. Give it a quick mix. Add chopped tomatoes 1 cup, 1 green chili diced thinly chopped, onions ½ cup and coriander. Mix well. Add Salt 1tbsp and 1 tbsp red chili powder. Mix it well. Add water continuously stirring the mixture. We want the batter to be of thick consistency. Break any lumps in the mixture while adding water. Step 2: Fry the uttappam
Step 2: Fry the uttapam Heat up a pan and add ½ tbsp of oil. Once the oil is hot, put the uttapam batter on the pan and spread it in a 5-6 inch diameter. The uttapam is on the thicker side, so don’t spread the batter too thin. Once the uttapam turns crispy golden brown on one side flip and then cook on the other side until it gets crispy and golden brown. Once cooked on both sides, remove it on the serving plate. Make the remaining uttapams in a similar way. Instant Rava uttapam is ready to serve.
Serve Instant Rava uttapam with green chutney or sambar.
