Herring was cheap and it was the finest of all fish, the King of Fish. The herring was always bought whole, and gutted and filleted by hand. My father always had to get his herrings fresh, preferably straight from the trawler. As a new husband in Helsinki I had my own herring recipes, 1st of May but in Hanko we ate grilled herring.
