Como Park Zoo and Conservatory truly holds a special place in our lives and in our hearts. We both have fond memories of coming to Como as children and as our children were growing up we visited often—and now our grandchildren also love this treasure in our backyard. Como has come so far over the decades, moving away from the old cages and tortoise rides, toward cutting edge habitats like Polar Bear Odyssey and Gorilla Forest and interactive experiences like the Giraffe Feeding Station and Blooming Butterflies. Como Park Zoo and Conservatory is so much more than a zoo and botanical garden, it is an education destination, a community classroom for teaching sustainable and conservation practices, and most importantly, an inspiring gathering place where everyone is welcome, free of charge. China, 1997 M.S., Kansas State University, USA, 2003 AN ABSTRACT OF A DISSERTATION submitted in partial fulfillment of the requirements for the degree DOCTOR OF PHILOSOPHY Department of Grain Science and Industry College of Agriculture KANSAS STATE UNIVERSITY Manhattan, Kansas 2009 Abstract Anthocyanins, a group of pink to purple water-soluble flavonoids, are well known as naturally occurring pigments credited with numerous potential health benefits. However, they are sensitive to degradation by pH, light, and temperature. Blue corn (maize) is known to be high in anthocyanins (mainly cyanidin 3-glucoside). Citric and lactic acids and glucono-delta-lactone (GDL) are weak organic acids used by the food industry. Reel, convection, and impingement ovens are all used in the baking industry and they use different baking times and temperatures because they have different heat transfer coefficients. Cookies are popular snacks and might serve as a vehicle to deliver antioxidants and fiber. Preliminary tests showed that acids significantly increase the total anthocyanin content (TAC) remaining in the cookies when used at the 1.5% level (flour weight basis, fwb), then plateau up to the 6 % level. The interaction of three acids with three oven types (impingement oven 355F/4min, reel oven 400F/10min, and convection oven 360F/4min) were conducted to investigate their effects on the TAC remaining in blue corn based cookies. Cookie formula was based on AACC method 10-50D. Whole grain blue corn flour to wheat pastry flour ratio (80/20), guar gum level (1%, fwb), and water level (21.5%, fwb) were determined based on RSM analysis.

To ensure that you have a mask that matches your student’s costume we are providing a link to where you can purchase the recommended mask. We have also provided an alternate mask color if families feel more comfortable choosing their own mask. Please note that if your student is in multiple acts, they may need to purchase multiple masks! Make sure to place your order ASAP to ensure that your student has the proper mask for the performances. We encourage you to purchase a few backups so that your student can practice in their performance mask during class. During the week of February 4, hip hop dancer and choreographer Bosco will be returning for the second year to choreograph the Teeterboard 0200 spring show performance along with a fun scene for this summer's upcoming production. Also arriving that week will be flying trapeze expert Rob Dawson, who will attend all flying trapeze classes along with holding workshops the following week. Finally, during our session break in February, ESAC Brussels instructor Roman Fedin will be here running Hoops, Mexican Cloud Swing, Silks, Static, Swinging Trapeze, Triple Trapeze, and Spanish Web workshops for our intermediate-advanced level students. His credits include P!nk, Missy Elliott, Chris Brown, 50 Cent, So You Think You Can Dance, The Voice, American Idol, Shake It Up, and the MTV Movie Awards. Through Bosco Dance Tour, he’s had the privilege of teaching at over 170 wonderful schools & studios. In addition to dance, he is constantly creating new items for BDT Clothing, and he loves honing his photo & video skills through Look Fly Productions. Bosco choreographed scenes in STEAM and is returning for his 2nd year choreographing spring and summer show scenes! Brown, “Commentary: U.S. Di- etary Guidelines Unfit for Native Americans” Ninety percent of diabetes and 80 percent of heart disease cases can be directly attributed to unhealthy eating and lifestyle habits. Time Magazine, 20 October 2003 Poor health resulting from lifestyle choice is a serious problem for Ameri- cans.1 Heart disease, obesity, diabetes, cancer, high blood pressure, and alcoholism rage across tribal Nations and have struck both the young and old. Members of my tribe, the Choctaw Nation of Oklahoma, for example, have been especially hard hit by a variety of ailments directly related to poor diet and lack of exercise. In a recent commentary, physicians Neal D. Barnard and Derek M. Brown stated that the 1995 Dietary Guidelines (that were reviewed in mid- 2000) advocate a diet that is unlike the traditional diets of Native peoples. An example of how out of step nutrition “experts” are with the needs of Natives is a study conducted in 1977 in Gastroenterology that revealed that 100 percent of Natives tested were lactose intolerant, which is a food in- tolerance to lactose, a sugar found in milk products. Those suffering from lactose intolerance are deficient in the enzyme lactase.
