“Sitting near the Mediterranean in the south of France, Gérard Bertrand is a game changer in the Languedoc. Utilizing organic and biodynamic viticulture, Bertrand is not just deeply committed to sustainability, but the end result that ends up in the glass. Balanced. Nuanced. Elegant. Michelle and I ended up in the south of France at their invitation and the experience was everything you could imagine. They host a Pruning and Truffle Festival every December at the Château l’Hospitalet in Narbonne. In most cases the experience enhances the wine. In this case the wines of Gérard Bertrand enhanced what was already an incredible experience. I am so honored to be able to have these wines our list and to pour them for you.”-Amy

POL ROGER BRUT NV $120

“I really didn’t know what expect to as we made our way from Alsace to Champagne. It had been a whirlwind of a trip. A different wine region every day, up at 6am and on the bus by 8 or 9am. We were in Épernay as guests of Pol Roger and it was going to be a quick tour. Pol Roger has been making Champagne since 1849, and had just recently unearthed a treasure trove of bottles that had been lost when two floors of the cellars collapsed in 1900. I couldn’t wait to tour the caves and hear the story. After we checked into our hotel, we had about 20 minutes to freshen up and then off to a 4 course Champagne dinner. Our host, Pierre insisted we blind each champagne as it came out. I’m afraid my nervousness overcame my palate and I missed them all. But if you’d like to give it a try, I’d love to recreate the dinner for you. A different vintage with each course….blind. Are you up for it ???-Amy

RIESLING FAMILLE HUGEL 2015 $55 “Jean-Frederick Hugel is charming, hilarious and über passionate about the family business. Famille Hugel has been making wine for 13 generations… they have a wooden cask in their cellar dated back to 715 AD! After a 6-course dinner in a restaurant that seated us at the last minute, (the original one refused to serve us as we were so late and possibly a little drunk) Jean-Frederick took us on a midnight stroll around Riquewihr. With Hugel Eau-de-Vie’s in hand, we walked around the empty streets of this charming town and learned not just about its history, but about the Hugel family and how they and their wine have survived generation after generation. If you aren’t going to start with Champagne, start with an Alsatian Riesling. They’re dry, crispy and perfect to ”-Amy

THE VINEYARDS OF CHABLIS “When looking for a white wine, all too often it’s a very “ABC” request... anything but Chardonnay. But Chardonnay is misunderstood, and deserves a chance to prove it! Like many things that get popular over time, change can yield positive results, but classics are often the best. Burgundy is where this flavor shifting grape originally thrived and made legendary wines. The tongue-tingling minerality of well-made true Chablis, sublime richness of great Meursault, or endless complexity of Montrachet simply can’t be found anywhere but here. Especially if you’re enjoying our seafood towers, you really should be looking here!” - TJ

CHARDONNAY OLIVIER LEFLAIVE MEURSAULT 2016 $165 “We stayed at his hotel in Puligny-Montrachet and were given tours of the winery and the vineyards. Like much of France and most of the wine world, great wine is made in the vineyards. Having spent 10 minutes touring the winery, we proceeded to spend the next 2 hours in the vineyards tasting the wines. Olivier Leflaive, started his negociant business separate from his family (Domaine Leflaive) in 1984. His sole goal has been not just to make great wine, but to bring a human face and life into it. I love that philosophy. Don’t you?”-Amy

“Grapevines are living, sentient beings with their days and nights consumed by concern for vital life choices, like when to sweeten their fruit to attract birds to spread their seed, or when to break bud in the spring, or when to start storing energy for the next season. These are critical decisions a vine makes each and every day. So how does a grapevine make these decisions? They do so by taking information from their environment. They measure the angle of the sun, the phase of the moon, the tug of the planets, the temperature and moisture content of the soil and the kind of chemical signals soil organisms are giving off. It knows when the birds visit, it’s on familiar terms with surrounding insects and their life stages and it takes a cue from the acorns falling off the nearby oaks. In short everything in its environment is a clue.” -John Williams, Owner and Winemaker

DOMAINE DENIS MORTET MES CINQ TERROIRS 2016

$210

“Domaine Denis Mortet has become a legendary Burgundy estate after its founding in the early 1990s. Following the tragic death of Denis in 2006, his son Arnaud assumed the helm of the estate. Arnaud’s style is as old school as it gets. All work in the vineyard is done by hand, horses for plowing the fields, low yield, gentle macerations and just enough new oak to round out his fruit selection. Mes Cinq Terroirs is a blend of five different parcels around the village of Gevrey-Chambertin. 30% whole-cluster, 30% new oak, 100% delicious.” -Patrick MARSANNAY Denis Mortet “Les Longeroies” 2016 165

VIEUX TÉLÉGRAPH “LA CRAU” CHÂTEAUNEUF-DU-PAPE 2015 $180

“For over a century the Brunier family has been making wine on the rocky outcrop of La Crau, the largest plateau in Chateâuneuf-du-Pape. Today the estate is lead by brothers Daniel and Frederic. When we had the opportunity to welcome Daniel Brunier for not only a staff training but dinner after, we jumped at the chance. He was super shy and reserved at first… so we did what we do best. We brought the party. 3 shots, after dinner drinks and dessert in the cellar later, $hit got real. Not only did we make a friend, he loved us so much he opened up his personal cellar and offered up a few back vintages that aren’t available anywhere else. Wanna geek out over his autograph? Ask to see the ceiling in the wine cellar. ”-Mike

CHÂTEAU COS D’ESTOURNEL LES PAGODES DE COS 2012 $135

“After playing runner up to Montrose in the fifties and sixties, Cos d’Estournel, emerged in the eighties as the leader in St. Estpephe. The Chateau sits on a ridge immediately north of the Pauillac boarder and its famous neighbor, Chateau Lafite-Rothschild. Under the direction of Bruno Prats, the Chateau advanced itself to the top of its class in St. Estephe, expected to produce one of the finest wines of the Medoc. Sometimes referred to as a Super Second, the wine is classified as one of fifteen Deuxièmes Crus (Second Growths), but in its best vintages merits First Growth status.” -Mike

BODEGAS RODA SELA 2015 $85

“Each grape, during its ripening, should capture, down to the last detail, the landscape in which it is grown, the heat of September, the cool nights of October, the transparency of the beginning of autumn, the shortening days, the north winds as the nights pull in, the fragrance of the herbs in surrounding fields, the sensations in the soil where the grapes grow, the darkness of the subsoil in which the roots penetrate. The tiniest hints mingle to make each vintage different, and our aim consists in knowing how to interpret these and how to bring them out through the wine.”- Bodegas Roda

CABERNET FRANC DAMA 2015 $140

“After a long week of running the Maple & Ash wine program, I usually like to open up a bottle of wine and do some painting on Sunday nights. I’m not an artist. I just need to get out of my head sometimes. Mary Derby, the co-owner and wine maker for DaMa wines, saw my painting on Facebook and decided to use it for her Cabernet Franc label…. Such an incredible honor. Mary is the winemaker and co-owner of DaMa wine and she is the real deal. She might be one of the original pioneers of Washington wine, but you wouldn’t know it by her unassuming demeaner and mischevious smile. Each of her wines features a work by a female artist on the label. A lover of the arts and an incredible wine maker, Mary is an inspiration. ”-Amy

RÔTIE CELLARS NORTHERN BLEND SYRAH, WALLA WALLA 2015 $135

“Old World Wines made from New World Vines”. That is an absolute perfect way to describe what Rôtie Cellars is accomplishing in Walla Walla. I love all of the wine that is coming out of Washington these days, but for me, the syrah’s are singing. The Northen Blend is 94% Syrah and 6% Viognier and it’s smooth like buttah people. Coming from the Rocks District in Walla Walla, this wine is lush, with loads of red fruits, blood oranges, and smoked meats. Perfectly balanced and ready to be enjoyed. Pairs well with wood grilled steaks, Billie Holiday and rainy days” -Amy

ANTICA TERRA CORIOLIS, EOLA-AMITY HILLS 2015 $145

“Maggie Harrison worked for nine vintages under the tutelage of Elaine and Manfred Krankl at the iconic winery Sine Qua Non. In 2005 Scott Adelson, John Mavredakis and Michael Kramer asked her to become the winemaker at Antica Terra, she emphatically refused. But the three friends were clever. They asked Maggie if she would take a look at the vineyard and offer her opinion about the site. She reluctantly agreed. Twenty-six seconds after arriving among the oaks, fossils, and stunted vines, she found herself hunched beneath one of the trees, phone in hand, explaining to her husband that they would be moving to Oregon.”- Frankie

CARPENTER POMMARD CLONE, SONOMA COAST 2014 $150

“I met Laura Carpenter and her husband Jake Hawkes when I went to The Alexander Valley Cabernet Camp. (Jake Hawkes makes a killer Cabernet as well.) I certainly wasn’t expecting to find a Pinot Noir that would rock my wine world….. but that’s what happened. Her husband, Jake, is the wine maker while Laura manages the business. I immediately snagged 5 cases each of the Pommard Clone and La Tâche Clone for the restaurant and good thing I did, because they are now sold out. Just like Maple & Ash, these wines are sexy as hell. Here’s my recommendation… start with a Carpenter Pinot and end with a Hawkes Cabernet. You won’t be disappointed!”-Amy

PEAY VINEYARDS AMA 2015 $135 “Ever taken a sip of a wine and stopped dead in your tracks? Felt it engage your belly and then seep up into your brain? That is the experience we seek to create for consumers of Peay wines. Those wines almost universally come from estate wineries. The people who walk the land, make the wine. They live with their vineyard and know it intimately. You can almost taste the vineyard, the history and the personalities of the people behind those wines. That is what makes them unique. That is what arrests you as you distractedly take a sip, “Hey, what is this?” To make a wine that captures a sense of a place and a people it is necessary to allow the vineyard to speak. Every decision we make is driven by a desire to let the vineyard show in our wines.”-Nick Peay

CABERNET SAUVIGNON NO FINE PRINT, CALIFORNIA 2016 $65

NO FINE PRINT IS A WINE LABEL, WITHOUT THE PRETENSION, THAT BREAKS DOWN THE BARRIER BETWEEN THE WINE AND LIFESTYLE. A passion project between friends, No Fine Print was inspired by the inherently convivial nature of wine. As the name implies, No Fine Print breaks down the barriers between esoteric sommelier jargon and those who simply appreciate and want to enjoy wine while not needing to possess formal training. No bullshit – no fine print.

CORISON 2014 $265

In 1987, Cathy Corison began to purchase great Cabernet Sauvignon grapes from prime benchland vineyards between Rutherford and St. Helena, intent on making powerful and elegant Cabernet Sauvignon that speaks of place. These well-drained alluvial soils had a long history of producing balanced, age-worthy, world-class wines, reaching back to the late 19th century. In her early years everything was done with smoke and mirrors, using purchased fruit and space in others' wineries.

CORISON “KRONOS” 2014 $440

In 1995, with the purchase of Kronos Vineyard, a property that had been a farm for over a century, there was finally an estate vineyard and a place to build a winery. In the spring of 1999 we broke ground to build our stately Victorian-style winery barn, designed by Cathy's husband, William Martin. The images on the Corison labels are inspired by old life symbols based on rain and a sprouting seed. They embellished vases excavated from the site of one of the earliest European cultures to cultivate grapes and make wine over 7,000 years ago.

NEYERS “VISTA LUNA” 2017 $58

Neyers Vineyards sits in the heart of the Napa Valley but Bruce's experience with French wine importer Kermit Lynch has had an undeniable influence on our wines. Many of the French producers Bruce works with farm organically, make their wines naturally without use of cultured yeast or laboratory designed malo-lactic starter, and bottle their wines without fining or filtration. All of their grapes are picked by hand, into small bins that hold only one-half ton. They are then laboriously hand sorted and inspected at the winery. We love his wine so much we bought everything! Chardonnay, Mourvedre, Merlot…….. If you’re looking for a new world wine with an old world sensibility, then you should be drinking Neyers!

MEET THE MAPLE & ASH WINE TEAM

AMY MUNDWILER- Wine Director

“My passion for wine started with a glass of cabernet franc from Chinon. I had just come off of a 15 year retail management career and really didn’t know what I wanted to do with my life. After spending 6 weeks in Spain traveling around the country, I decided to get a serving job until I decided what I wanted to do with my life. I had always had a passion for the rituals and history behind food and wine and Spain intensified that. I was hired at a little wine bar that happened to serve a cabernet franc by the glass. Cab franc hadn't been in my wheelhouse and it really was an ah-ha moment for me. I grabbed a copy of The Wine Bible, an empty wine glass and I got to work studying and tasting. 6 years and 3 restaurants later, Belinda Chang gave me the opportunity to be her assistant wine director here at Maple & Ash. 9 months later, I was the Wine Director. It's been a seriously wild ride. Outside of wine, I sing a little jazz and paint. One of my paintings was recently chosen for a wine label, which I am beyond thrilled about. Having my hobby collide with my career, should be interesting. Cheers!"

MICHELLE CRABTREE-Assistant Wine Director

“I come from humble beginnings of working in a, small town Italian restaurant, where the only wine served was Chianti, Pinot Grigio and White Zinfandel. Many horrible hangovers later, my love for drinking wine grew past my humble beginnings. I have worked in over 30 restaurants (almost more than I care to admit) I went through my “I only drink Merlot” stage to graduating to drinking all things Italian when I worked at Osteria Langhe here in Chicago. My Heart lies in Italy!!!! I LOVE Champagne as well, and love to host a great brunch where plenty is served and enjoyed! Beyond wine my greatest loves in life are my son Conal, my mom and my niece Josie.

MIKE LOVEISKY-“Doc Love”

“Musician with a finance degree, night owl by nature, and lover of all things wine & food. I was raised in the Northwest suburbs of Chicago and come from a large family with five siblings. My first job in a restaurant was as a bus boy in a small family owned wine bar; I was 19. I knew nothing about wine at the time, but very quickly became consumed by it. My quintessential “Ah-Ha!” moment was a bottle of 2003 Freemark Abbey Sycamore Vineyards. What started out as a hobby turned into a passion, and somehow years later, into a career. My father raised me on The Beatles and America’s Pastime. So, in the words of the Great Bambino “Remember kid, there’s heroes and there’s legends. Heroes get remembered but legends never die, follow your heart kid, and you’ll never go wrong.”

MEET THE MAPLE & ASH WINE TEAM

FRANKIE VILLAR- aka Cellar Ninja

“Growing up in Kansas I was lucky to work in my family's restaurants alongside a very special woman, my grandmother. At the time I didn't see it that way, giving up my free time after school, my weekends, and there was no such thing as summer vacation. She taught me the days work was never done until it was tomorrow. When I moved to Chicago over a decade ago I stayed in the hospitality industry doing much of the same I did back in Kansas. At a point I became bored. When I found wine, I found a work and a passion that made me want to devote all my free time to. After some time I traveled to New Zealand and worked with the Weaver family at Churton vineyards for the harvest season, and it felt like home to me, working 12-15 hour days doing, making something that meant as much to them as working for my family when I was growing up. For me wine is that days work that will never be done until it is tomorrow and I am happy to have it that way. So cheers grandma, and thank you for helping me find my way!”

PATRICK LAMAN-“The Pool Boy”

“Before writing about myself I want to say “Thank You” to the people who gave me a shot, trusted me, or most importantly-put my ego ‘in check’. To all those people who have contributed to my wine journey thus far…Thank you. I started as a dishwasher in Akron, Ohio at a small family restaurant. I’ve worked every position in the restaurant at some time or another. I was 22 when I caught my ‘big break’ and got my start in a wine bar down the street from my house. 7 years later, here I am. The Maple & Ash Wine Team. I still wake up every day in absolute amazement at the opportunity that life has presented me. Coming from Akron, people always ask, ‘Are you a LeBron fan?’ Yes, but for a different reason than most. I look at LeBron as someone who grew up in the same town as me and worked incredibly hard to become world class at something he loved. I’m here to do the same. Call me over to your table. Let’s build a wine experience you’ll love.”

TJ BOZEK-“The Terroirist”

“I found myself in the restaurant business as a means to put myself through college, and more than 21 years later, I’m still here and having more fun with it than ever. When I’m not thinking about food and drink, I like to be outside (especially if it involves disc golf), Chicago sports, and traveling around the world with my girl. I’m a big science nerd at heart and naturally got more curious about wine the more time I spent around it. However, my moment of flavor revelation came back in 2004 while tasting food and beer together during a training for a new restaurant opening. Somehow, some way, the flavors perfectly mingled to create something memorable enough to recall in detail all these years later. I may have missed out on a lot of great foods and wines from being a picky eater as a kid (and oldest of 5), but I’m all about making up for lost time! If you like exploring new wines or getting nerdy about them, I’m your guy.”
