Prepare the chocolate sauce: Dry roast the spices in a pan, then add the cream and chunks of chocolate. Heat only until the chocolate has melted. Remove from heat and set aside. 2. To make the Churro dough, combine all the dry ingredients in a bowl. Mix the butter, vanilla and boiling water in another bowl. Add to the dry ingredients. The dough should be stiff enough to hold its shape. Add more water if necessary. 3. Put the dough in a piping bag with a star nozzle and rest for 15 minutes. 4. Heat the oil in a heavy based pot or deep fryer up to 180°C. Pipe 10cm long pieces of dough into the hot oil. Fry until golden on both sides – turn often with a fork.
