UNIVERSITY OF TUSCIA, VITERBO DEPARTMENT FOR INNOVATION IN BIOLOGICAL, AGRO-FOOD AND FOREST SYSTEMS (DIBAF) ______________________________________________ PhD COURSE IN FOOD BIOTECHNOLOGY - XXIV CYCLE YEAST LYSIS DURING BOTTLE-FERMENTED SPARKLING WINES AGEING IN PRESENCE OF A β-GLUCANASE OENOLOGICAL PREPARATION AGR/15 Coordinator: Prof. Marco Esti Tutor: Prof. Gabriele Anelli Cotutor: Dr. Maria Teresa Frangipane PhD student: Sara Torresi To my family 1 ABSTRACT This PhD thesis dealt with the study of yeast lysis during bottle-fermented sparkling wines ageing in presence of a β-glucanase oenological preparation. A four-step experimental procedure was set up by performing the following tests; 1) Preliminary study of Lallzyme MMX ® oenological preparation (Lallemand Inc., Canada), commonly used to improve the short maturing of wines on lees, both in presence and in absence of two secondary fermentation yeast strains: Saccharomyces cerevisiae bayanus BCS103 ® (Fermentis, division of S.I. Lesaffre, France) and Saccharomyces cerevisiae bayanus Lalvin EC1118 ® (Lallemand Inc., Canada) in synthetic buffers, in dependence of pH and ethanol concentrations, kinetic parameters determination; 2) Sparkling wines production by the traditional method. Base wine inoculum was performed using the same selected yeast strains, both in absence and in presence of Lallzyme MMX ®; 3) Base wine and sparkling wines sampling at 4, 8 and 12 months after tirage and study of: yeasts morphological changes by TEM (Transmission Electron Microscopy) and SEM (Scanning Electron Microscopy) observations; foaming properties; free amino acids composition; total proteins content. A fourth step was focused on perform a sensory analysis 12 months after tirage by a trained panel group aimed at assess the differences between sparkling wines produced in presence and in absence of Lallzyme MMX ®.

Harald Fairhair (Harald rfagre), the Viking leader who united Norway around 900, is generally considered to have been the first Norwegian King. Local chieftains continued to rule the country and in the mid-14th century, Queen Margaretha united Denmark, Norway and Sweden in the great Nordic Union. Sweden broke out of the Union after a short while and then the plague swept through Scandinavia, killing all but one of the Norwegian chieftains. The country was left in disarray, and Denmark became the leading nation, eventually reducing Norway to a Danish province. The Union lasted until 1814.

A Quartino is a quarter of a liter of wine, about a third of a bottle or a glass and a half. Served in a small carafe it is a perfect way to split a glass of wine for an aperitivo or an intermezzo. 1 “My dream was to magically pour wine from bottles without ever pulling the cork. The remaining wine could then go back in my cellar, so that I could enjoy it again, whenever I desired. What followed was a decade of development and testing until I had a system that left the cork in place, but still delivered great glasses of wine, indistinguishable from untouched bottles.” Greg Lambrecht, Coravin Founder Using the Coravin system we offer some of our best wines by the glass.

A ~JECESSARY INrRODUCTION My attention was drawn to the problem of the revolution of the Comunidades by a chance rereading of the Bible of Hispanic history, Sr. Jaime Vicens Vives' Approaches to the History of Spain (cf. Bibliography). Sr. Vicens notes in his discussion of sixteenth-century r,astil1e that onB of the Itnoble elements" that was IIpruned!l by the rising orthodoxy Vias "the bourgeois ideal in the War of the Comunidades" (p. 97). My suspicions were immediately aroused by this remark, as I have always deferred to J.H. Elliott's characterization of the Comuneros as traditionalist, quasi-feudal reactionaries. A hasty perusal of Elliott (cf. Bibliography) failed to resolve the contradiction: an~ having smelled a rat, I began to do pre1iminarJ research on the Comuneros. I soon found that serious scholarly investigation of the subject had been carried out by only a handful of historians. This is not to say that Spanish historians and other Hispanists had overlooked the Comunidades-- far from the contrary. However, it was quite apparent that the revolt/revolution of the Comuneros was one of those lamen- table historical events which are often commented upon but very rarely under- stood.

ISSN:1696-750 Immigration and Crime in Spain, 1999-20061 César Alonso-Borrego Nuno Garoupa Marcelo Perera Pablo Vázquez October, 2008 Abstract: Crime in Spain is not high, by European standards, but together with immigration, crime rates have increased significantly in the last decade. The goals of this paper are (i) to evaluate empirically the extent to which there is either a negative or a positive correlation between crime and immigration and, (ii) to provide a preliminary assessment of the extent to which a causal mechanism can be identified. We find that both immigrants and natives have contributed to the increase in the crime rate. However, the contribution of immigrants seems to be relatively higher. This result is partly explained by the fact that immigration has contributed to the main increase of the collective of males aged 20 to 50, which are responsible for most offences, and by differences in socioeconomic opportunities between migrants and natives.
