VELÍŠEK1 1Department of Food Chemistry and Analysis, Institute of Chemical Technology, Prague, Czech Republic, *E-mail: [email protected]; 2Department of Chemistry, SUNY Albany, Albany, NY, USA Abstract: Precursors involved in the formation of pink and green-blue pigments during onion and garlic process- ing, respectively, have been studied. It has been confirmed that the formation of both pigments is of a very similar nature, with (E)-S-(1-propenyl)cysteine sulfoxide (isoalliin) serving as the primary precursor. Upon disruption of the tissue, isoalliin and other S-alk(en)ylcysteine sulfoxides are enzymatically cleaved, yielding prop-1-enyl- containing thiosulfinates [CH3CH = CHS(O)SR; R = methyl, allyl, propyl, 1-propenyl], among others. The latter compounds subsequently react with amino acids to produce the pigments. Whereas the onion and leek-related propyl, prop-1-enyl and methyl derivatives can form pink, pink-red and magenta compounds, those containing the allyl group yield dark blue products after reacting with glycine at pH 5.0. 18 Journal of Nutritional Therapeutics, 2017, 6, 18-37 Nutritional and Therapeutic Potential of Allium Vegetables Ravi Kant Upadhyay* Department of Zoology, D D U Gorakhpur University, Gorakhpur 273009, U.P., India Abstract: Allium vegetables are highly nutritional, its dietary use improves digestion and mental health and lower down cholesterol level. Use of onions, garlic, scallions, chives and leeks show therapeutic efficacy against cardiovascular disease, hyperglycemia, and stomach cancer, Onions contain allylsulfides and flavonoids particularly quercetin that is an important anti-oxidative and reduces hepatocytes apoptosis in streptozotocin-induced diabetic rat. Steroid saponins and sapogenins present in garlic bulbs are used to prepare soft soaps. β-chlorogenin is a characteristic steroid sapogenin from garlic that is used for skin ointment and as a shiner. Both garlic paste and soft garlic preparations are used for flavoring the food items. Garlic products that contain the most safe, effective, stable, and odorless components are the most valuable as dietary supplements. Garlic also contains non sulfur compounds such as steroid saponins. Alliums showed antimicrobial, antithrombotic, antitumor, anti-hyperlipidaemic, antiarthritic, anti-hyperglycemic anticarcinogenic potential. Allium vegetables contain organosulfur compounds, including DATS, diallyl disulfide (DADS), ajoene, and S- allylmercaptocysteine (SAMC), have been found to induce cell cycle arrest in cancer cells. Alliums have great ethnomedicinal importance as these are used as native remedies against wide spectrum of diseases including diabetes. Allium origin natural products are of great therapeutic and dietary use. These are most preferred items used by nutritionists, physicians, food technologists, food chemists. Green allium vegetables are good source of natural pharmaceutics which are good for health and act against nutritionally induced acute and chronic diseases. -

Received: June 13, 2015 Revised: July 3, 2015 Accepted: July 19, 2015 Abstract The cowpea beetle, Callosobruchus maculatus (Fabricus) (Coleoptera: Chrysomelidae), is a major pest of stored cowpea militating against food security in developing nations. The comparative study of Xylopia aethiopica and Aframomum melegueta powder in respect to their phytochemical and insecticidal properties against C. maculatus was carried out using a Complete Randomized Design (CRD) with five treatments (0, 1.0, 1.5, 2.0 and 2.5g/20g cowpea seeds corresponding to 0.0, 0.05, 0.075, 0.1 and 0.13% v/w) replicated thrice under ambient laboratory condition (28±2°C temperature and 75±5% relative humidity). The phytochemical screening showed the presence of flavonoids, saponins, tannins, cardiac glycoside in both plants, while alkaloids was present in A. melegueta and absent in X. aethiopica. The mortality of C. maculatus increased gradually with exposure time and dosage of the plant powders. -

It grows on serpentines or limestone in open rocky stands with a scattered distribution, mainly in mountain loca- tions. Previously, the populations of this geophyte were attributed to A. meteoricum Heldr. & Hausskn. ex Halácsy, described from a few localities of North and Central Greece. These two species indeed show close relationships, chiefly regarding some features of the spathe valves, inflorescence and floral parts. They also share the same diploid chromosome number 2n =16 and similar karyotype, while seed testa micro- sculptures and leaf anatomy reveal remarkable differences. -

Andrew’s Rogan Josh Recipe Ingredients: - Garlic/Ginger paste(4 garlic cloves and about 1 inch of fresh ginger chopped if you can’t get the paste - blended with water into a paste) - 2 Tablespoons of oil - 1 lb of meat chopped into cubes (lamb is best but you can use beef or chicken) - 2 or 3 tomatoes (chopped) - 2 onions (finely chopped) - 5 cardamom pods (whole) - 4 cloves - 1 or 2 bay leaves - 5 or 6 black pepper corns - 1 and 1/2 cinnamon sticks - Good teaspoon of cumin seeds - 1 teaspoon of ground coriander - 2 teaspoons of paprika - 1 teaspoon of cayenne pepper - 3 or 4 tablespoons of plain yogurt - 1/4 teaspoon of garam masala (not essential - I usually forget about it) - Juice of 1/2 a lemon Heat the oil and brown the meat cubes. Take the meat out and set it to one side. Put the bay leaves, cloves, cardamom, pepper corns and cinnamon into the oil while it’s still hot. Stir it around until the bay leaves change colour and the cloves begin to swell. Add the onions and fry for 5 minutes or so - until they turn a lovely brown colour. Add the ginger/garlic paste and stir for 30 seconds. Now add the coriander, cumin, cayenne and paprika and stir for another 30 seconds. Return the meat and its juices to the pan and stir for 30 seconds. Add the tomato and after a minute or so add 1 tablespoon of yogurt. After stirring in the yogurt until it’s well blended, add the rest of the yogurt. -

Medicinal Uses of Culinary Herbs Tea- 1 tsp of dried herb per cup of water or 2 tsp of fresh herb to a cup of water & one for the pot. Cover the cup while it steeps to keep volatile oils from rising with the steam. Steeping time- 5-10 minutes for herb leaves Green tea or white tea- 1-2 minutes tops or cold infusion Tea from roots, branches, barks & the harder parts of herbs, is called a decoction - simmer 20 minutes You can drink teas or you can soak your feet in them, depending on how you want to use them. Tinctures- stronger than tea- shelf life- 10 years. Infused oils, Salves, lotions or poultices for topical use. Test for sensitivity, do your homework before taking an herb and consult your doctor or pharmacist, especially, if you are on medications or are pregnant. Rosemary (Rosmarinus officialis) add to bath water for sore muscles, for improving memory, antioxidants, stimulates poor circulation, for headaches, as a digestive herb it stimulates flow of bile. Peppermint (Mentha piperita) Grow it in a pot, needs more water. Mints are one of the oldest & most reliable herbal remedies. For digestion, helps with gas, nausea, heartburn, bronchitis, colds & flu. Peppermint is also a helpful herbal catalyst, so drinking a cup of peppermint tea before taking other herbs opens the circulation & potentiates their action. Thyme (Thymus vulgaris) for bronchial problems, gastrointestinal ailments, laryngitis, lack of appetite, anti-parasitic, & skin inflammations. It can also be used as a mouthwash, skin cleanser, anti-fungal like for athlete’s feet & as an antiseptic. -
