Cupcakes • 1 box pound cake mix

3 • /4 cup HT Milk • 2 eggs 1 Cilantro • /4 tsp. HT Ground Cinnamon • 1 tsp. HT Traders Vanilla Extract

1 • /4 cup HT Sweetened Flaked Coconut

1 Coconut Lime • /4 fresh cilantro, finely chopped • 1 jar Dickinson’s Lime Curd Cupcakes Icing • 7 cups HT Confectioner’s Sugar

1 • /2 cup HT Butter, softened • 2 Tbsp. HT Lime Juice

1 • /4 cup HT Milk • zest of one lime • 2 Tbsp. of finely chopped cilantro

1 • /2 cup sweetened toasted coconut flakes Preheat oven to 350˚. Line cupcake pan with cup cake liners. Beat cake mix, milk, eggs, cinnamon and vanilla in a large mixing bowl with an electric mixer on low for 30 seconds then increase speed to medium and mix for 3 minutes. Fold in coconut and cilantro by hand. Fill each baking cup halfway. Bake for 20 minutes (or until cake tester comes out clean). Cool completely on wire rack. To fill cupcakes, cut out a small bit of the top/center of the cupcake. (Cut a hole that’s about the size of a dime and the amount of cupcake you take out is a little larger than a marble.) Fill each hole with about 1 tablespoon of Dickinson Lime Curd. For the icing, in a medium bowl beat confectioner’s sugar, butter and lime juice. Add the milk a little at a time and continue beating until the mixture is light and fluffy. Once fluffy, fold in the lime zest and cilantro by hand. Frost cooled cupcakes with a thick layer of icing and sprinkle the toasted coconut and garnish with cilantro leaves, if desired. 3

Garlic Lime Rice

• 4 cups water • 1 tsp. Gaea Organic Extra Virgin Olive Oil • 2 cups HT Traders Jasmine Rice • 1 tsp. sea salt • 1 lime, juiced • 1 tsp. HT Black Ground Pepper

1 • 1 tsp. fresh garlic, minced • /2 cup chopped fresh cilantro 17 fl. oz. Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed. Transfer rice to a large bowl and Gaea Organic cool slightly, 5 to 10 minutes. In another bowl mix together lime juice, garlic, olive oil, sea Extra Virgin Olive Oil salt, and pepper. Add mixture to cooled rice and stir. Finish by mixing in fresh cilantro and serve with fresh lime slice. 11.99

Roasted Pork Banh Mi Sandwich

1 • /4 cup julienned daikon radish • 1 hoagie sandwich roll 1 • /4 cup julienned carrots • 4 oz. cooked pork roast, thinly sliced • 1 Tbsp. Nakano Rice Vinegar • 6 thin spears English cucumber, diced 1 • /4 cup HT Mayonnaise • sliced jalapeno peppers, to taste 1 • 1 tsp. hoisin sauce • /4 cup fresh cilantro leaves • 1 tsp. HT Traders Selected Varieties; 12 fl. oz. Toss julienned daikon and carrot with seasoned rice vinegar to coat well. Let sit until veggies get Nakano slightly limp, 15 to 20 minutes. Drain and refrigerate. Mix the mayonnaise, hoisin sauce, and sriracha in a small bowl and set aside. Cut open roll, pull out some of the bread from the top half to better hold Rice Vinegar the filling. Spread the interior surfaces of the roll with the mayo mixture. Place sliced pork, cucumber, picked daikon and carrots, jalapeno, and cilantro leaves in the roll. Enjoy! 2.79
