riesling Germany is home to the world’s largest vineyard area devoted to Riesling (well ahead of Australia and France, which rank second and third, respectively), and it is doubtlessly their most celebrated grape variety. In contrast to the common belief that all German wines are sweet, German wines are categorized by the degree of ripeness measured in natural grape sugar upon harvest. These categories do not reflect sweetness levels in the finished wine. Dryness levels are not to be confused with ripeness categories which depend on the ripeness of the grapes harvested in the vineyard. These ripeness categories are determined by the sugar content in the grapes, which is measured in degree Öchsle, varying by growing region. Riper grapes not only have more sugar but more extract and flavor in the grape, hence a more expressive wine.

Jean-François Ganevat comes from a long line of winegrowers, dating as far back as 1650. He worked both for his father and for the prestigious Domaine Jean-Marc Morey in Chassagne-Montrachet, then returned to the Jura in 1998 to take over the family domaine.
With only eight-and-a-half hectares under vine and seventeen different local varietals planted of both red and white grapes—an incredible amount of variation—he cre- ates a stunning number of cuvées, ranging between thirty-five and forty every year!
His methodology goes far beyond the details of the average vigneron, as each cuvée calls for a highly individualized élévage. All of his wines are de-stemmed by hand, each clus- ter carefully trimmed with scissors. Jean-François is committed to minute doses of sulfur, so low in fact, that many fear it hurting the wines during transport. He curbs this issue entirely by aging many of his whites on the lees for extended periods of time, anywhere from two to eleven years! In all of his years making wine, he has never had a problem.
In the Jura, many of the wines go through a traditional, intentional oxidation; however Jean-François aims to lend a greater lightness and elegance to wines of this style than are typical. He gravitates toward the Burgundian style, using ouillage to top off bar- rels. Jean-François Ganevat is a master of his craft, one of the true magicians of the eclectic, a fervent perfectionist and insatiable lover of details. To say that his grapes are spun into gold would not be far from the truth; they are entirely otherworldly.

The Coveted Wines of Sine Qua Non
Manfred Krankl’s Sine Qua Non are such exclusive wines, that there’s a six-year waiting list to get on the waiting list. Krankl founded Sine Qua Non in 1994, working in California’s south central coast and Santa Barbara County regions, helped along by friends like Adam Tolmach at Ojai Vineyard and John Alban of Alban Vineyards, and by grapes from Alban and that Rhône Ranger touchstone, Bien Nacido Vineyards. Sine Qua Non’s reputation rests squarely on luscious, big-bodied Rhône-style red blends based on Syrah and Grenache and to a lesser extent on blended whites from Rhône grapes like Roussanne and Viognier, and he is not averse to using Chardonnay in the mix. Krankl defines his wines as “wines that are not purely intellectual, but they have sex appeal to them, that is juicy and full-bodied but with liveliness and agility and grace, and not fruit bombs.” Perhaps wines that are between the superdense, artisanal Shirazes of Australia and the layered, leaner reds of the northern Rhône Valley and Châteauneuf-du-Pape. Most of the grapes used by SQN are sourced from vineyards in Santa Barbara County. Santa Barbara County has 3 special viticultural areas where SQN has sourced grapes: Santa Maria Valley, Santa Ynez Valley, and Santa Rita Hills.

DOMAINE OLGA RAFFAULT Few Cabernet Francs have the holding power than Olga Raffault’s vibrant, earthy, mineral, and complex wines. Since her passing a few years ago, Domaine Olga Raffault is currently run by her granddaughter Sylvie and her husband Eric de la Vigerie. This estate has plots of land in the Savigny-en-Véron district, rather steep by the Vienne riverbanks. ‘Les Picasses’ vineyard stands out from the rest: fifty year old vines growing in alluvial clay with a chalk limestone base produce friuts which is particularly expressive, full of dark fruits like cassis and dark cherries with a terrific mineral content, and good acidity for structure with terrific complexity.
Using traditional winemaking methods, the grapes are, naturally, handpicked and fermented in stainless-steel tanks. The wines are then aged in larger, neutral oak -and sometimes traditional chestnut - barrels in the -re gion. The ‘Picasses’ spends two to three years in oak, to reduce the wine and soften the tannins, and it is usually released about four years after the vintage.
Raffault’s ‘les Picasses’ style is generally rustic, quite earthy, with hints of orange zest and deep, dark cherry flavor. The tannins are soft, but present, and the mineral complexity in the finish is superb. The estate makes two more cuvées of red: les Barnabés and les Peuilles, and a limited-quantity Chinon Blanc: le Champ-Chenin.

DOMAINE FOURRIER
For over four generations, the Domaine Fourrier has made a mark on the history of wine in Burgundy. The estate was one of the first domains to actually export its wine to the USA, and it is also one of the most well-endowed estates in the village with holdings throughout the most heralded appellations.
Jean-Marie Fourrier, born in 1971, has been at the helm since 1994. Wisely combining the traditions of his father and uncle, he gained his experience while working with Henri Jayer and the Domaine Drouhin (in Oregon). Ever since his ascension, the wines of Domaine Fourrier have garnered critical acclaim. He now works the domaine with the assistance of his sister, Isabelle, and his wife, Vicki.
The Domaine Fourrier owns 9 hectares of vineyards spread amongst the communes of Gevrey-Cham- bertin, Morey-St.-Denis, Chambolle-Musigny and Vougeot. The holdings are scattered up and down the slopes and range from village to Grand Cru level. Included among the holdings are important parts of “Clos St. Jacques” and “Combes Aux Moines” as well as a small but valuable slice of Griottes Chambertin. The impeccably tended vineyards are composed of vines of an average age between 50 and 70 years old.
Working with Mother Nature, intervening as little as possible in order to allow the vines, the terroir and the vintage to express themselves, is the basis of Jean Marie’s winemaking philosophy. To capture the individual, unique expression of terroir in his wines, he vinifies each vineyard separately, not only the premier and grand crus. Fourrier avoids the use of sulfur dioxide in his wines, preferring to use tempera- ture, CO2 and lees contact to preserve them. No more than 20% new oak is used in order to preserve the purity of the fruit and the personality of each wine. Since the 2005 vintage he has waxed the necks of the bottles and ceased the use of corks treated with peroxide, to reduce the risk of premature oxidation. What ends up in the glass is a pure expression of terroir with as little interference as possible by the winemaker. Domaine Fourrier’s wines possess superb balance, enchanting elegance, finesse and complexity.

GHISLAINE BARTHOD The Domaine Ghislaine Barthod is now a standard bearer for the great wines of Chambolle Musigny. It was founded in the late 1920s, a fusion of the work of two families, one from Burgundy and one from the Jura: Noellat & Barthod. Ghislaine began an intense apprenticeship with her father Gaston in the 1980s, she has brought new vigor and a a distinct touch to every area of concern from vineyard management to vinification, but always with the profound regard for the purity of pinot noir and the character of the wines of Chambolle.
The wines of Chambolle are noted for their finesse and delicacy. The average age of the vines on the Barthod estate is over 30 years old. Yields are always modest; a vigorous pruning and occasional “green harvest” are practiced. The vineyard holdings encompass the very top sites in this esteemed village. Fuées, Cras, Baudes, and Veroilles virtually surround the great Bonnes Mares, each giving a partial taste of that Grand Cru; the centrally-located Charmes seems to fuse all the elements of Chambolle; and, the friendly Beaux Bruns and rigorous Châtelots serve as counterpoints one to the other.
Ghislaine follows traditional methods of vinification and carefully ages her wines. The grapes are partially de- stemmed before going into the fermentation vats. Only natural yeasts are used. The more sluggish start en- countered when working with wild yeast gives the must a natural period of maceration before fermentation begins. The length varies from 2 to 5 days and is dependent upon temperatures. After fermentation, the wines are racked into small barrels (about 20% to 25% of which are new) and aged for about 20 months. These wines are particularly ageworthy and offer the rare privilege of deeply exploring the terroir of this singular village.

CHÂTEAU DE BEAUCASTEL Among the prominent people in the town of Courthezon during the sixteenth century was the Beaucastel family. This remarkable domaine is producing what most people acknowledge to be the finest wines of Châteauneuf-du-Pape. The vineyard is planted in all the traditional grapes: Grenache, Mourvèdre, Syrah, Cinsault, Vaccarese, Counoise, Terret Noir, Muscardin, Clairette, Picpoul, Picardin, Bourboulenc, and Roussanne. All thirteen varieties may be used in the final blend.
For their red wines, Mourvèdre has the largest percentage, followed by Grenache, Counoise, Syrah, and Cinsault. The yields at Beaucastel are extremely low, and each variety is harvested separately to ensure optimum maturity. The vineyards are treated as a garden: no chemical fertilizer, no chemical week killers or sprays are permitted. Organic fertilizer comes from compost and only a minimum of traditional sulphur-copper spray is used in the vineyards.

DOMAINE DE LA SOLITUDE Domaine de la Solitude belongs to the Lancon family, one of the most ancient families native from Chateauneuf du Pape. The members are direct descendants of the Barberini family who came from Italy with the popes and established the estate in 1450. On the label, the family crest of three bees, dates to the middle ages. The three hats at the top of the label signify a pope (Urbain VIII) and two cardinals from the family.
What began initially as a private production eventually grew in stature and reputation, and currently the Estate is a contiguous 100 acres with vines averaging 50 years of age. On their part, Michel and Jean Lancon have taken the future of Domaine de la Solitude in their hands, focusing attention on the vineyards. Driven by the will to improve the quality of their wines while respecting tradition and aiming for excellence, in 1999, Michel and Jean, decided to create their “cuvées prestigieuses” which provide an optimum quality wine.

Tenuta Dell’Ornellaia The Ornellaia Estate was created in 1981 and is located near the picturesque village of Bolgheri, on the unspoilt Tuscan coast. The estate was one of the first to plant vines in the area. Tenuta dell’Ornellaia makes outstanding wines even in poor vintages - better than any other. The uniqueness of the area was epitomized by the famous poet Giosuè Carducci who gave eternal fame to the monumental Cypress Avenue leading up to Bolgheri. The coastal plain is a natural refuge to numerous migratory birds and other protected species. In the midst of all this natural beauty lie the vineyards of Ornellaia.
