The Filet is one of my favorites. It’s cut from the center of the tenderloin, yielding tenderness unlike any other. When prepared properly, the Filet melts in your mouth, always leaving you wanting more. It’s typically seared on each side, fi nished over a lower heat and then served medium or medium rare.
