In recent years, pomegranate has become a widely known product. The production growth, consumption and trading volume have been increased because of the significant developments in growing techniques, nutritional technologies, storage and transportation means (Vardin and Abbasoğlu, 2004). Extensive use of pomegranate molasses and the importance of healty have been effective reasons for this Project. The reasons of establish bussiness in Hatay city; - Most of pomegranate production is in hatay and close cities - Cheap labor - Hatay is supported by development agencies and instutions - The one of biggest international transport fleet of turkey is in this city - Port city - It is gate of middle eastearn countries 9 The cost of Project Principal 702,012 € Grants-Agriculture and rural development 1,000,000 € support instution- ARDSI Loan - Eximbank/turkey 1,000,000 € 2,702,012 € Describtion of product Pomegranate molasses, a concentrated pomegranate juice and widely consumed in the Middle East, may be rich in more efficient antioxidants than that found in the juice. Pomegranate molasses is a highly nutritive product because the product is a concentrate and specially the presence of high mineral contents makes it more nutritious. In the Kitchen It can be compared to balsamic vinegar, yet is much fruitier and should be used sparingly. Pomegranate molasses add depth and richness to meat, fish, vegetables and vegetarian stews. It is a versatile condiment that can substitute vinegar, honey and in some cases lemon juice in salad dressings. Try it in marinades, vinaigrettes, dressings and dips. (Anonymous ) Pomegranate molasses goes well with duck and chicken and can be simply brushed over whole birds before roasting to give a crisp skin and tangy flavour. Add some to a herby dressing of olive oil, lemon and garlic - be generous with chopped parsley and mint - and use to enliven fried or boiled vegetables and salads. Incorporating it in marinades helps to tenderize lamb and pork. Pomegranate molasses can also he diluted with water to make cordials and sorbets. (Anonymous ) 10 Pomegranate Molasses Production Traditional methods are still being used to produce pomegranate molasses. It is concentrated simply by boiling, without the addition of further sugar or other additives (Tekeli, 1965; Gökçen et al., 1982). A typical processing requires cleaning, crushing, extraction, filtration, clarification and evaporation in open vessel or under vacuum, though different type of fruits requires different production methods (Vardin and Abbasoğlu, 2004; Kaya and Sözer, 2005). The strong antioxidant activity of it is also important for human health. - Major hydrolysable tannins in pomegranates are gallotannins, ellagic acid tannins and gallagyl tannins (these are termed as “punicalagin”s). These compounds are found abundantly in the pomegranate juice (< 2g/L) (Karaali et al., 2006). - It is also stated that punicalagins have the highest antioxidant activity (Seeram et al., 2005). De Nigris (2005) reported that the antioxidant level in pomegranate juice was higher than found in other fruit juices, e.g. blueberry, cranberry, orange, and red wine. - In 2013, 44 clinical trials were registered with the National Institutes of Health to examine effects of pomegranate extracts or juice consumption on a variety of human disorders, including(Wikipedia): • prostate cancer • infant brain injury • prostatic hyperplasia • hemodialysis for kidney • diabetes disease • lymphoma • male infertility • rhinovirus infection • aging • common cold • memory • oxidative stress in • pregnancy diabetic hemodialysis complications • atherosclerosis • osteoporosis erectile • coronary artery disease dysfunction 12 - Pomegranate juice has

Whether it’s putting a sports star’s face on a Coca-Cola ad, labeling junk food as a “smart choice,” or attaching arbitrary designations such as “all natural” to foods high in fat, sugar, and salt, the food industry knows it must attract health-conscious shoppers. Over the past few years, alcohol companies have begun appropriating many of these misleading advertising techniques. Spirits companies are positioning their vodka as “all natural,” even though the products haven’t changed. Beer companies are sponsoring marathons and running ads showing toned drinkers meeting up at a bar after a work-out. Superstars of grueling, high-endurance sports are being tapped to promote alcoholic beverages. These advertising practices are legally tenuous, morally unsound, and potentially dangerous.
