At Empire State South, F&W Chef-in-Residence Hugh Acheson’s Atlanta restaurant, chef Josh Hopkins ferments green peanuts in two ways: in a basic mix of sugar, salt and water, and in an unusual mix of sugar, salt, coconut water and .
